    You know, I was thinking the same thing. They do look a lot like mushroom caps.

    1 Lb Russet potatoes
    2-3 lb pork loin ( I used 1 1/2 Lb pork loin since there is only two of us)
    1 yellow onion chopped
    1/2 yellow onion left whole
    2 garlic cloves chopped ( I used chopped dried Garlic 1 tablespoon)
    2 bay leaves
    5 small tomatoes peeled/cored/shopped ( I used two regular sized cans of Del Monte diced tomatoes for Chile)
    2 canned Chipotle peppers chopped (seeded and ribbed)-- ( I used 3 Chipotle peppers out of the can as is)
    2 tablespoons of Apple cider vinegar
    1 teaspoon dried thyme
    1/2 teaspoon dried marjoram
    salt to taste

    DIRECTIONS Mine:

    I put everything in a slow cooker and cooked it for 2 1/2 hours removed the pork then shredded it and put it back in the slow cooker for another 45 minutes

    Thier

    COOK POTATOES UNTIL TENDER SET ASIDE
    In a large pot place the pork loin, 1 half whole onion garlic and the bay leaves bring to a boil.
    reduce the heat to a gentle simmer until the pork is cooked thoroughly (approximately (45 minutes)
    Shred the pork into small pieces and sit aside
    IN A SKILLET
    place the shopped onion cook until tender
    add the shredded pork, the potatoes, the Chipotle peppers, and the tomatoes
    cook until the tomatoes break down and release their juices ( approximately 15 minutes)
    then stir in the thyme, vinegar, salt and marjoram
    continuing to cook over medium heat until some of the liquid is evaporated ( 5 minutes)

    Serve with heated Tortillas and lime optional fresh cilantro leaves
    Surivial is just an unplanned adventure when you are prepared

    Last night I made a roast turkey breast, corn on the cob, and roasted carrots and potatoes. Turkey is just too good to have only once or twice a year.

    My girlfriend made Pot Roast for dinner yesterday. Served over mashed potatoes, it was great.

    Turned out pretty good!

    Recipe:

    Combine a couple Tbsp of brown sugar, plus a little Sambal Oelek, grated ginger, and sesame oil in a bowl.

    Toss in 2lbs beef short ribs - about 4 meaty ones, English cut, and coat them in the mixture. Let sit for 10 minutes.

    Heat up a little peanut oil in a pan, on medium high heat. Brown the ribs in the oil, being sure not to crowd the pan. I had to do two at a time.

    Chuck them in the crock pot, along with:

    half a large onion, diced
    3 fat cloves of garlic, minced
    1 mild to medium pepper, chopped - I used a Cubanelle
    About a pound of baby carrots, sliced in half, lengthwise
    If you like mushrooms, put some of those in there too.

    For the liquid:

    About 2 cups of organic, unfiltered apple juice
    A little soy sauce
    A splash of rice wine vinegar

    (The original recipe called for a diced pear and water, instead of the apple juice. There were no pears at the market. So I went with the apple juice. Use whatever you have.)

    Top off with water, if needed. I had to add another cup or so.

    Cover and cook on low for 8 hours.

    Remove the meat, and take out any fatty bits or tendon. Use a slotted spoon to remove the veggies, and set aside.

    Use a gravy separator to remove some of the fat. Or if you are a really good planner, you would make this the day before, and refrigerate it overnight to congeal the fat, and then remove it.

    Pour the juice into a pot, and reduce by about half. Season if necessary. I added a little more Sambal Oelek, rice vinegar, soy sauce, and sugar. Thicken with a cornstarch slurry, if you like. I did!

    Toss the meat and veggies into the sauce to coat them and warm them up.

    Serve on jasmine rice, and top with some green onions and sesame seeds.

    I should point out that I'm not a demanding man. Well read. Some would consider me ruggedly rugged. Others would consider me...well, they don't count. They are liars one and all. I am trustworthy, loyal, helpful, friendly, courteous, kind, obedient, cheerful, thrifty, brave, clean, and reverent. I've had my shots and I am housebroken (shut up you guys). Do you need a mail order husband 'cause I sure do need that good lookin' grub. I mean, just look at that avatar. Am I not cute or what? Huh?

    I actually did consider going to the Jamboree, since it's not far from where my family lives. But then I realized A) I have concert tickets during that time, B) I have no PTO left for the year.

    Oh, and I made some more things -- mesquite molasses, and brown rice milk.

    I fixed a grilled slab of pork shoulder, marinated in Tyme, garlic, rosemary and and home
    dried onions. The shoulder has less fat, [trim it well] and marinate in a container overnight,
    in the fridge.
    Grill over med-low heat. Baste with a bit of beer when it looks dry. Cook to just past reddish-
    pink in the center.

    The amounts of spices is a hand scoop of this and a pinch of that. Use what you like.
    Serve with garlic mashed potatoes, the stronger the better. Home grown tomatoes,
    and blueberry pie with ice cream.
