    That looks delicious. I might add some pineapple slices for the juicy and tenderizer. Are those butternut squashes?

    Our thanksgiving won't be turkey this year. I've saved a real nice deer ham that I carved into rump roast. along with that, We'll be enjoying some wild greens, and summer garden veggies (Peas and butterbeans, etc). For dessert, we'll have Pecan pie from the trees in the yard that I saved from those evil ninja spy squirrels.

    I love meals that don't require going to the grocery store!

    Any food wrapped in bacon is good. Except the "healthy ninjas" have invaded my Area of Operations. I suspect there will be a battle over the "good stuff" here at Thanksgiving time. I will be like Custer at his last stand if they try for my pumpkin pie though!!!

    lol I thought I was the only one that cooked like this!

    ohhhh and speaking of Thanksgiving....y'all have got to try my aunt's sweet potato casserole!
    Debbie’s Sweet Potato Casserole
    INGREDIENTS
    3 c mashed sweet potatoes (2 cans)
    1 c sugar
    2 eggs
    1 tsp vanilla
    ½ c margarine
    1/3 c milk

    topping:
    1 c brown sugar
    1 c chopped pecans
    1/3 c flour
    1/3 c margarine
    DIRECTIONS
    Mix ingredients with mashed potatoes. Put in greased casserole dish. Mix topping and crumble on top of potato mixture. Bake 25-35 min. at 350 degrees. Serves 8-10

    I have to be honest here, it is more like a pie (minus the crust) than a casserole. I figure I only get to indulge this extravagantly once a year, so I might as well make the most of it. Life is short, eat dessert first!

    Mountain Mama - your recipe looks similar to one of my favorite dishes from Honey Baked Ham - Sweet Potato Souffle.

    I have not tried the recipe that I found on the web, but you are right - eats like a pie. Yum.

    Ingredients
    6 sweet potatoes
    1 cup white sugar
    1/2 cup milk
    1/2 cup melted butter
    1 teaspoon vanilla extract
    2 eggs, beaten
    1/2 teaspoon salt

    1 cup dark brown sugar
    1/3 cup all-purpose flour
    1/3 cup melted butter
    1 cup chopped pecans
    Directions
    1.In a large stockpot, cover sweet potatoes with 1 inch of water; boil for 20 minutes, or until fork tender. Drain, allow to cool and remove skins.
    2.Preheat oven to 350 degrees F (175 degrees C). Grease or butter one 2 quart casserole dish.
    3.Place potatoes in a mixing bowl and with an electric mixer, beat on low speed until potatoes begin to break up. Increase speed to medium high and blend until smooth.
    4.Reduce speed to low and add sugar, milk, butter, vanilla, eggs and salt. Mix well.
    5.Allow any potato 'fibers' to remain on the beater and remove. Pour sweet potato mixture into the casserole dish.
    6.Prepare the topping in a small bowl by whisking together the brown sugar, flour, butter and pecans. Sprinkle mixture over potato mixture and bake for 40 minutes.


    I did find one error in your recipe. Serves 8-10? More like serves 2 - yummmmmmm.
