Pressure Canner

Could any one recomend a good pressure canner. I see they range from $60.00 to $300.00 . Obviously i would rather spend less but i want it to last and do a good job.

Any thoughts?

I use an All American Pressure Canner, I purchased it last year and used it quite heavily. Their customer service was excellent to work with, too. Here's a link to their page. The size you get will depend on your personal needs. I purchased the 21 quart model 921.

Oh don't talk to me about canners! pressure or otherwise. I can't get hold of one for love nor money over here! grrrrrr
I make do with a large stock pot and a jam thermometer so can only use the water bath method.
I'm giving consideration to an experiment though, I thought about using my domestic pressure cooker (it has 3 weight settings) then getting the results tested for botulinum after a few weeks by a friend.

Why can't you order one from the States? I would imagine the shipping is expensive. They are pretty heavy. But if you can't get one over there......

Sadly Rick, the cost of shipping from U.S to UK is huge that's if I could find a company who'd be willing to ship one, I've tried.
However I've hijacked scatches's thread (sorry)
BUT if I could get hold of one I'd go for an All American too, then just get the size that's right for your needs.

Have been looking for the name of a German Pressure canner that is built like a tank ,for you ,no luck so far.Try searching for the German pressure canner on some of the EU sites.

Just make certain you follow the directions. There is no rubber seal on the canner. You apply a thin layer of Vaseline between the canner base and the lid.

Do these come with a "how to" manual?

I`m interested in learning to can but need a bunch more info

Also, how are glass jars that have been in the basement x# of years? I have about 2 CASES full from the previous owner but they are dusty... thinking they should probably be cleaned before use but other than that usable?

There are lots of good publications (most with recipes) out there. As far as the jars - as long as you clean them then sterilize them in boiling water (along with the rings) you should be fine. You probably want to buy new lids (they're cheap). You never want to resue a lid in the canning process.

I've seen all this stuff @ Wal-Mart, probably cheapest unless I buy by the pallet online (which may be in the future depending how big next years garden is).

I bought the same model you suggested. It showed up on Friday. It is of VERY VERY good quality. I am happy wih this purchse.

It's pretty much the definitive guide to home canning. Also the Ball blue book of home canning is good too.

Regarding the jars. Once you've given them a wash, run your finger round the lip of each jar to check for any chips in the glass. Even the smallest chip will prevent a good seal forming during processing. Hope this helps.
