Yes, I gave in to the healthy diet trend. Well, at least for today. BENESSE should be so proud of me....
Today's creation was Chicken Sausage and Gravy over Oat Flour Biscuits. Sorry, can't post pics, the computer is still down.
Anyway, I broke up 8 chicken sausage links (24 oz.) and browned the meat over high heat. I added garlic powder, onion powder, black pepper, and Goya Adobo seasoning, none of which I measured, until it tasted the way I wanted it to. There was barely enough oil from the sausage in the pan for the gravy - maybe 4 tablespoons - but it was enough. I added a half cup of oat flour to the sausage, reduced the heat to medium and stirred it all up to coat the sausage, and then added a quart of 1% milk and stirred once in a while as it thickened.
I ladeled the sausage gravy over oat flour biscuits fresh out of the oven.
I was surprised, but I really enjoyed it. The Beagles each got a biscuit drowned in sausage gravy, and neither one complained, so I'll assume that they liked it, too.
And for the record, I ate it with cold grilled veggies - asparagus, yellow peppers, onion, summer squash, and zucchini.
The only thing I have to work on now is portion control, LOL.
I think I'm going to whip up a batch of quinoa vegetable "fried rice" as my next healthy creation.
Writing about all of this healthy eating is making me hungry. A frozen vanilla yogurt butterscotch sundae may be in order tonight.
