The thing I probably used the most (to my surprise) was the folding saw. It was very handy for cutting my firewood down to size so I didn't have to build a big firepit or risk my fire getting away from me by burning longer pieces in two. I could have done without it, but it sure was handy.
I'm not sure how well I would have done without my little cooking pot. Many wild plants simply must be cooked to be palatable, or even edible.
I'm trying to think what I didn't use. I didn't use the multitool, but I might have if something had come up.
It was warm enough (50's) that I might have done without the blanket, or just used a space blanket. The rolled up blanket was the most trouble the carry. It wouldn't fit in my pack, so I rolled it up and tied it on. It was hard to get through heavy brush with it sticking out.
I could have gone without the jar of meat. Wild edibles were plentiful.
Next time I might bring some fishooks, substitute a space blanket for the big blanket, and figure out something for a pillow.
It was HUGE. And fast too - it was gone by the time I got my eyes open!
