IMO the best thing with material like that is to play with it and find out what works for you.

I would not use the carpenter's square, but that may just be me - I have a soft spot for old tools.

Do you remember the old wooden plane...where the body is made from wood and you have a metal plane blade? That blade , to my opinion is good too.

Old handsaw blades will make a decent knife, albeit, they are thin. Just don't heat the metal too much while cutting/grinding or you'll lose the temper.
And I'm with crash on the square, clean it up and add it to your collection.
I use band saw blades from lumber mills to make knife blades. They work fairly well, however they too are thin.
Will sharpen up to "scary sharp", but the edge will dull with hard use. They are easy to re-sharpen.
I'm sure that crash, ScottishSmith, randall77 (apologies if I left anyone else out) could provide you with more technical info. Those guys are experts!
When all else fails, read the directions, and beware the Chihuahuacabra!

The square would be a good keeper, but not for blades - too soft and probably not enough carbon content. The saw blades on the other hand would probably make nice knife blades.
