When you eat, the acids in your stomach will do the initial "break down" of food. After that is done, you body produces substances to neutralize that acid as it enters your intestinal track. That process takes water. While it is true that your body will extract water from the food you eat, it is done after this process. So, this process will use larger volumes of water to neutralize the acids, causing increased dehydration. If the water is not available in your body, the acidic material will run through your intestinal tract causing added problems.
