my lettuce did that this year. i chopped them down when more than half of the seed pods where mature [many of them even managed not to shatter out when i was doing it :P].
after threshing the flowerheads out into a tub till no more would come out, i bundled them up, leaned against the bench and forgot them there for two weeks.
when i noticed them again, all the imature pods which has been green and still not opened had matured, and i got half again as much seed out of it.
i think they do much the same thing [rapid, sudden ripening] if you just stop watering them and let the soil dry.
