    Default How do I preserve veggies from summer untill winter?

    How would I go about this and what kind of jars do I need?

    Can I just get an air tight jar and put some clean water in them and stick my cherry tomatoes small cucumbers beans carrots and beats in them? or is there this big long process?

    You can try pickleing them. Or buy commerical ones and store them

    I was going to point you towards a site, but if you google "canning" or "canning _________" with the blank being what ever it is you want to can, you'll get tons of info.

    Dry them they take up less space and keep more nutrients than if canned. Get a copy of Making the Best to Basics they have all the info on drying for anything you can imagine. We dry or pickle all of our produce and a lot of our meat.
