    Default Brunswick Stew recipe

    I found this recipe, but I'm betting some of you have better ones.
    Please share. (Yes Ken, it's OK if you replace the squirrel, with chicken, pork, or whatever.)

    Brunswick Stew

    2 ea Squirrels (quartered)
    2 ts Salt
    1 c Canned Tomatos *
    2 ea Small Onions, sliced thin
    4 ea Potatoes, sliced
    1 ea 16 oz can Green Lima Beans
    1 tb Sugar
    1 ea 8 oz Can Whole-Kernal Corn
    4 tb Butter
    Salt
    Pepper
    1/2 c Sherry


    * Or 1 can Tomato soup

    Place quartered squirrels in a large cooking pot with 2 teaspoons salt, and cover with water. Simmer over low heat 1 1/2 hours, or until meat can be easily removed from the bone. Cut meat into bite-sized pieces. Return squirrel meat to the cooking pot and add tomatoes, onion, potatoes, Lima beans, and sugar. Salt and pepper to taste. Cook over medium low heat until potatoes are tender. Add sherry, corn and butter and simmer gently for 5 minutes.

    That looks pretty good. Thanks! I honestly don't believe I've had squirrel cooked any other way but fried or over an open fire.

    Then clearly you've missed out. Squirrel is best when it's been marinated overnight.

    Other than who did it first, the stories that I've always heard, and read, pretty much agree that it's origins are simple country folk, making stew with what they had available.

    Isn't it funny, that so many foods that I really like, come from simple country folks. Ya think Ken is gonna call me simple, now?
