They split it all the way down the middle on the underside. Then, they clean out the abdominal cavity (like field dressing!

) and spread the tail and stuff it all the way down with a cracker-bread-herb stuffing with additional large chunks of lobster and scallops mixed in. Serve it with drawn butter. Mmmmmmmmmm.
