    I've stopped by the Geoduck Tavern once or twice in Binnon, Washington. They had a board with pics of "the biggest catch".

    I worked in a Japanese restaurant in Michigan for a year after I trained in Japan for 3 months. I was cleaning Geoducks for a dish and an American waitress asked me, "What the heck are those?" "Sealion penises." I said with a straight face and totally seriously."Really? OMG! I knew Japanese people ate some odd things but never dreamed they would eat something like this." Just then the owner came up and asked, "Are you done creaning the crams?" She exploded, "Clams! you were pulling my leg! That's not funny." and ran off. "George" the owner asked me what was the problem and I told him and the other chefs and we shared a hearty laugh.

    We have always pounded pork steaks and beef steaks, especially when grilling them, put a little seasoned flour down and we use a small saucer (plate) like buffalo china to do the pounding. My Grandmother, and mom both do it this way and thats where I learned it.

    Normally when I beat my meat, I use the conventional manner. But, I have been known to vary to keep things interesting
