Hold on just a minute there. As the senior member of the Quality Control Department it is imperative that I sample said beans before claims of "best" can be freely brandished.:D:D
I really don't cook and I don't know how they are prepared for me. But I do know that they always taste better when they are cooked while camping.
Sit boy Sit,You can have the last bite.
Do you remember the Mel Brooks movie Blazing Saddles? " How about another plate of beans Mr. Taggert"? Mr. Taggert: " I think ya"ll had about enough"!
Mongo like beans.......and sheriff Bart.
I've been trying to get my Aunt's recipe for years now. Every time there is a family doing she is told to bring her beans.
I would like a recipe please. And yes the Blazing saddles, That is funny!
I just got a call from my daughter who is going to school in the SW. She's been invited to Thanksgiving dinner with a family out there and she wants to bring something to the dinner. She is asking questions about my wife's "Calico Bean" recipe. She told them it makes the beans taste sweet, and they can't imagine what that would be like.
I hope they like it, but as a bean dish, I can't imagine anything that would taste less like a Mexican bean recipe.
CALICO BEANS:
INGREDIENTS
1 (15 ounce) can kidney beans, undrained
1 (16 ounce) can baked beans with pork
1 (15 ounce) can butter beans, undrained
1/2 cup ketchup
2 teaspoons white vinegar
1 tablespoon dry mustard
3/4 cup packed brown sugar
1 pound lean ground beef
4 ounces bacon, chopped
1/2 cup chopped onion
salt to taste
ground black pepper to taste
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet over medium heat, fry the ground beef, bacon and onion together until ground beef is no longer pink. Drain fat.
In a large mixing bowl, combine the kidney beans, baked beans with pork and butter beans. Stir in the ketchup, white vinegar, dry mustard, brown sugar and cook beef mixture. Mix thoroughly, adding salt and pepper to taste.
Pour the bean and meat mixture into a 9x13 inch baking dish. Bake in preheated oven for 30 to 40 minutes.

We usually substitute maple sugar and mollasses for the brown sugar and - at least this time of year - chopped venison for the hamburger. We also cook it in a crock pot.
My mother, with her New England heritage, used to make baked beans in a can buried in the hot coals of a fire. She wouldn't make them in the kitchen. The day before Thanksgiving, we'd have to go out, back of the garden, and build her a big fire. When the fire got down to coals and ashes, she'd bring out a #10 can with the beans and we'd dig a hole in the middle of the fire and set the can in.
The beans were from our garden, dried on the vine. She'd soak them overnight and add pork and mollasses. They would sit in the coals for a few hours, or perhaps overnight. I remember that the beans on the edges would be kind of half burnt, but often tasted the best. In recent years I've asked her for the recipe, but she said, "There was no recipe."
my girlfriends mom makes some really good beans. not sure exactly how she makes them though. all i know is that she puts bacon and some kind of bbq sauce in them. mmm tasty :D

I've fixed these with just great northern beans before or have omitted one type of the other because I didn't have them on hand and didn't want to run to the store.
1 (14-ounce) can baby lima beans
1 (14-ounce) can great northern beans
1 (14-ounce) can pinto beans
2 (28-ounce) cans pork and beans
3 cups chopped onions
1/2 cup brown sugar
1/2 cup hickory flavored bbq sauce
1/4 cup catsup
2 tablespoons dry mustard
1 tablespoon black pepper
8 strips bacon
Preheat the oven to 350 degrees F.
In a large bowl, combine all ingredients except for the bacon and stir well. Spray a large casserole dish with nonstick cooking spray. Pour mixture into the casserole dish. Lay the strips of bacon across the top. Bake for 1 hour.
You've been waiting a long time to use that haven't you?:D
Sadly, been using it for a long time....
I find adding Jalapenos to just about anything makes it taste much better, especially beans. Oh yeah then add some feta cheese.
You guys are going to make my wife made at me, So far those sound so good but I wont tell her.

Place diced onions and oil in large heavy bottomed pot with lid and cook until clear. (if using meat, Brown it first and then do the onions...) Add chopped and canned peppers and cook until they are starting to brown. stir constantly. When the peppers are starting to burn your eyes, add all the spices and stir to coat everything. Add canned tomatoes. add corn and beans and stir. Add enough beer to keep the whole thing wet and to keep the bottom from burning (a cup? Drink the rest) Bring it to a rolling boil while stirring more and when it is thouroughly hot bring it back to a simmer and put the lid on. Simmer for a half hour.
When ready to serve, serve it with Cilantro and shredded cheese on top and tortillas or chips and some good fresh Salsa and a can of Tecate.
