Had to shoot two car injured deer last night. One of them had a broken back, but there was very little meat damage. The other, led me a merry chase, about a half mile through the woods by flashlight, dragging one front leg by a piece of sinew. Normally I wouldn't touch deer this late in the winter, but these are "town" deer, and fat with corn.
I'm just now finishing up two thick steaks. When the deer get on that corn diet, you've got some good eating. You can't tell the venison from lean beef.
I like to cook venison hot and quick. The outside is burnt and the inside is just to the pink side of red. I wish I had enough of the juice to make gravy. It is just perfect.
