Venison Steak

Had to shoot two car injured deer last night. One of them had a broken back, but there was very little meat damage. The other, led me a merry chase, about a half mile through the woods by flashlight, dragging one front leg by a piece of sinew. Normally I wouldn't touch deer this late in the winter, but these are "town" deer, and fat with corn.

I'm just now finishing up two thick steaks. When the deer get on that corn diet, you've got some good eating. You can't tell the venison from lean beef.

I like to cook venison hot and quick. The outside is burnt and the inside is just to the pink side of red. I wish I had enough of the juice to make gravy. It is just perfect.

My Honey's working tonight, so I had a cold slice of chourico pizza and two donuts.

Venison. Venison with Bearnaise Sauce. Whimper.

I often see downed deer on my way to work in the early morning. A couple times I've seen town LEOs loading them into the back of their blazer cruiser. No need to wonder what prompted the purchase of an SUV for a cruiser, LOL.

I've never learned to dress a deer. Biggest things I ever kilt were chickens.

I creamed a deer with my car about 3 years back in Westport, Mass. Jumped right over the guard rail on Rt. 88 at around midnight.

Car was totalled. Police Officer said the deer was mine if I wanted it. Since it no longer resembled any deer I'd ever seen before, I declined. While waiting for the tow truck, some guy who looked more frightening than the deer came by. He took it home.

Venison steaks...:drool: add sauteed mushrooms and onions... it's enough to make me purr....

Ken, 88 is a tough place at night for deer.Lots of woods and dark roads.Coming home form fishing at Horseneck I have had many close calls.

I've had more luck shore fishing off of Gooseberry and at the end of Beach Avenue (you can't park there anymore) and around Elephant Rock. Still, nothing beats Cuttyhunk and Nomans.

My church participates in the "State provided wild game" program. We get called several times a winter to pick up road kill moose by the Troopers or APD. What meat is not salvageable is used for trapping bait. We have several large freezers that we store the meat in until it can be given to families in need at no charge.

Klkak, that's a great program, and it probably achieves much better results at a far lower cost that most food pantrys do.

I know to very important things about the program.

1. Butchering a moose is "bloody" and "hard" work.

2. My wife makes me undress in the garage after recovering a road kill moose and get straight into the shower.

I'll have you know I have 5 doors on my garage counting the doggy door. One door leads directly into the master bathroom.
