Distilling sea water is a great way to suppliment an exsisting water supply but I wouldn't reccomend relying on it for a sole supply. There are health risks in using only distilled water due to it's lack of minerals.

There is also a problem with running through piping since it will attack the plumbing. There are a number of ways to resolve the issue. For example, adding small amounts of calcium carbonate or limestone to the water to re-mineralize it.
The practice of desalination is wide spread with some 11,000 desalination plants world wide, according to WHO. Those plants produce about 6 billion gallons per day. In addition, there are substantial requirements in shipping, where either desalination is the only or best method of obtaining potable water.
The key, of course, is maintaining a balanced diet if demineralized water is your only source and you have no way to remineralize it.

Most of the water I drink is distilled. I suffer no ill affects from it. Probably because of the bacon consumption, but who knows...

I assume your subs used desalination to acquire fresh water. Would that be true?

Yep. We had two desalinators on-board. DI water for the reactor, drinking water, and oxygen.
