I had bacon grease candles that sat out for over a year. The grease had gone rancid and turned into a wax like substance. Still no smell, which leads me to believe there was still no bacterial action involved. I wasn't brave enough to eat it but had it rotted I'm sure I would have smelled it in short order.

My malamute would eat about 50lbs in a month.
For long term fat storage, look at tallow. People say it will last indefinitely when processed correctly. I didn't believe that, so I made some up from elk tallow, and put it in a canning jar. I left the lid off, and stuck it on a shelf. That was a little over a year ago, and it looks and smells exactly the same. Supposedly, if you make real pemmican, that it will store indefinitely as well. A dog, cat, or person can live a long time on pemmican.
If I had a cat, I wouldn't store much extra food for it. It can find it's own food. Even a lazy cat will get hungry enough. Everyone is different, but if my dog wasn't helping me find food, I won't be keeping it long.

Wonder if you could vaccu-seal regular dry dog food if it would last longer. Air is what causes food to spoil.
