It was hot today, so I had cold roast chicken, some boiled new potatoes and mixed salad with the first leaves from the garden!!
I cut some pockets in some chicken boobs. Then stuffed them full of various cheeses (mine was brie, cheddar for the boy, and goat cheese for m'lady), and some local ham. Secured them with some toothpicks. Seasoned them up and browned them in a skillet. Then chucked the pan in the oven.
Meanwhile, I made a sauce, using some preserves I made from foraged figs, homegrown melon, and grocery store pears that had gotten too brown. To that, I added some apple cider vinegar, honey, szechuan peppercorns, and salt, and whirred it with the stick blender.
I also got some chard and garlic greens from the garden, and sauteed them with some meyer lemon olive oil.
Turned out pretty good, except my cheese ran out. :blushing:

Seems rather an unsafe thing to do when poultry is concerned however. :online2long:
I fried up some taters and green beans.....in bacon grease.....then threw the bacon in there, for good measure.:innocent:

I'm making a big batch of beef jerky today and tomorrow. I'm using both a dehydrator and my smoker. Next week, I'm taking the boys in my Boy Scout troop on a 50-mile canoe trip up on the Buffalo National River and I wanted a good snack to take with me. Although, as soon as the boys see what I have brought, I won't have any left.
I'm making a batch of teriyaki jerky, a batch of mesquite and just plain ole hickory-smoked.
When should crashdive and I expect to receive our Quality Control samples? :) Remember........

A while back, I cooked a ham on the grill, and it turned out really good....and I really liked having those leftovers in the fridge.:sailor: Today is gonna be HOT and MUGGY, so I figured I'd throw a ham on the grill, and let it kinda cook itself.:innocent:
Breakfast was 3 large eggs from the farm down the road with diced onions tomatoes ,mrs dash southwest spice a little franks hot sauce and sprinkled with parmesan cheese
Dinner tonight is baked Trout stuffed with spring onions and Ginger. Yum, yum, yum!
The beef Wellington was a (very) special treat for the 1 week stopping smoking goal. Over here farmed trout is dirt cheap. I like Cheeseburgers too, they just cost more!
Aren't farm eggs the best? We've been getting them for a while now, and now will never go back to those bland factory chicken eggs. :tongue_smilie:
It was a busy weekend, so I haven't cooked much. Sunday, I made some breakfast tostadas, but they got eaten before I could take any pics.
Last night we had brats, from a local pork raiser / butcher. Leftover beans, pictured above, and balsamic green beans on the side.
Tonight we're having that figgy chicken that I made earlier.
We have two of the grand kids tonight. I picked some strawberries this morning so I think I'll make some strawberry pancakes and bacon for dinner.
I love children, but I couldn't eat a whole one.:innocent:(they taste just like chicken!)

Grilled up some local pork chops, and some "8 Ball" zucchini from the farmers' market, and served it on some Uncle Ben's "Brown & Wild" microwave rice.
I also made some tomato jam, using the Super Sioux from the garden. MMM MM good!

I didn't bother seeding or peeling the tomatoes, and it was still perfectly delicious.
