ive been doing this for years
it works really well
the next time you cook ribs on the grill,
throw 3 or 4 tuna cans filled with water under them.
keep your heat low
add more water now and then
you can cook them for 6 to 8 hours if you like
and they will still be very, very tender
works great for porketta or roasts or whatever as well
give it a try
