Canid's right in that they all qualify as "venison" but to me, whitetail has the "gamiest" taste, caribou is much more subtle flavor, moose is a heavier meat, in a way closest to beef...
i see what you mean about moose/beef but for my money the best red meat might have to be bison. i feel bison is what beef hopes one day to be. i love that stuff.
