Interesting.

When you distill the water you are removing the minerals from the finished product. As long as you have a balanced diet that shouldn't be a problem. On the up side, if there are any undesirable metals they will also be removed.

Distilled water will absorb carbon dioxide from the air over time and create a very weak form of carbonic acid. That's true of store bought as well. That triggers additional stomach acid to be produced when you drink it. You might get some heartburn but as long as your digestive system is okay it shouldn't harm you. You can counteract that and raise the pH by adding baking soda to the water. You can also reduce the amount of carbon the water absorbs by keeping it in a closed container.

Here's an EPA resource that talks about the Ph. Go to the last paragraph. I would not recommend the ammonia to raise the pH since you intend to drink it. They use it merely for the experiment.

On the down side the ethanol should make a nice pretty blue explosion. On the up side if you have enough distilled water you should be able to put out the fire.
