I took the family fishin' again Sunday at dark. The lake is really low as we found out last weekend. We used worms and minnows for bait. So to make an experiment in survival. I kept the fish even though most were fish I normally release as in not wanting to eat. We caught alot of White Perch and a few Yellow Perch. A couple of what I consider Game Fish a Crappie and a Brown Bullhead Catfish. So now I am heading out to get ya'll some pics and get them dressed out. Yes I know they were caught last night. We got home about midnight and I worked till now today. ( I thought the wife would have them cooked by now.....lol) They have been on ice and willl be fine. One thing though I know "Northerners" enjoy eating perch but we generally do not eat them down south, so here is where i need help any tips on dressing them out or cooking them. I hear the Yellow Perch is really bony and the White not so much so. Any tips will be appreciated and I'll get pics up tonight! Thanks....

Don't know about white or yellow perch. If they're anything like ocean perch - taste great - just fillet and watch out for bones - lots of bones.

SAY WHAT!?!?!? Man for the longest time growing up I didn't know what any other fish tasted like!!! Just clean 'em, Bread 'em and deep fry 'em. Yeah they may have a lot of bones but so does Jack..Uh sorry, that's what we called Red fin Pickerel. Jack was prepared like this... Scale,gut, and filet. Once you have them fileted , score the meat and cook as you would any other fish. Mudfish (Bowfin) is the only fish I know of back home that most people would not eat( wash your hands 10 tomes and they still smell like fish), But even they can be cooked. An old friend of my Mom's made croquets out of them. They were pretty darn good. I guess that was just the old Depression resourcefulness coming out of them. They cooked and ate things most of us wouldn't consider eating.
This guy does a pretty fair job. Once word of caution. Never, ever use your wife's cutting board to clean fish...he's obviously not married.

No problem..I did pics are on the way.. Hope you guys can stand a doctorate in skinning fish...It'll be new to most..and it isn't the way my Father taught me....coming soon to a theater near you!

Yep that's how I was raised. But if I learned a better way I used it and fishing and eating fish I have made a practice of. I never scale fish. I skin them. I never gut fish, I cut the meat off the bone after skinning and never see guts and very little blood. I could do it on your kitchen table and not leave a mess...Pics are on the way!

Thanks Crash we had a great time..I did an instructional on cleaning fish too. It'll be a different post and I am gonna edit this one to add descriptions to the photos. Check back tomorrow..

I can sure tell you have fished before though! What I am really driving at in this post is my way of dressing out any fish...I will be demonstrating it as I add to the post and I am sure some know it..but never seen it on the net...

Well I've learned something today. The striped Perch we call a Common Perch and Red Lakes' Chain Pickerel we call a Pike!

What did you do with the gar? They are a pain to clean but man that meat is so white and delicious. Cut those bad boys up into steaks and deep fry 'em. Talk about good :). NEVER eat their roe! It has a chemical similar to arsenic in it and will most likely kill you. Good fishing trip, man. OT :Your little girl is very pretty. Better pick out a big / strong stick right now and keep it handy to beat the boys down with. Good luck on that one. I'm glad God blessed me with only boys. I can sleep a little easier at night. An older fellow once told me while we were fishing and talking about our kids, "With a boy all you have to worry about is one worm.....With a girl you have to worry about ALL the worms". You get the idea. I thought that was hilarious. Best.

Thanks all for your compliments....Glock, I really appreciate the analogy you gave as if I don't worry about her enough already! and No I didn't eat the Gar it was released. In fact I have never eatin Gar. I remember warning signs at lakes throughout Florida that described the edible portion of Gar. As I recall there is a poison and I don't know about the row, the warnings indicated a section of meat that ran the length of the fish between the Dorsal and lateral line. But I can't recall which part was OK to eat. I think the warning was also specific to either Florida Gar or Longnose Gar. I'll have to look that one up. About eating Perch, this is something I will NOT be doing again, I ate one and was real careful of the bones but my throat has fealt like I swallowed fiberglass ever since.

That is a Northern Pike
I put him back. I don't keep the big fish. Caught 11 walleye all between 12 and 18 inches. Ate those.
That is quite the haul you got yourself.

i find the only way to eat surf perch [not good at efficiently filleting a 4" fish] is to dress and cook them whole, that way there is no expectation of getting a piece without bones in it, and then i can adapt my expectations :D
as far as fresh water perch, whatever kind they had in Michigan [which look like your yellow perch, so i'm assuming that's what they where] where a different story. they got to a decent size [up to 12", occasionally beyond] and where more managable under the knife.

We had fun and that was what I expected from the trip. I am normally a trophy hunter or rather fisher and this is definately not my usual catch. The post was really about what could be expected here when survival fishing. I could post some pics just for bragging rights of fish of world record proportions but really it ias not what the post was about. I hope everyone isn't missing the intent of the post.

ah, i'm normally a fisherman and meal hunter :D
i'd honestly love to do more big game hunting, but with it being so involved and expensive, i don't know if i have the motivation for it. even deer hunting in california is a bit too involved for my current situation. i am interested in feral pig. they are the least protected/restricted of our big game animals.

The one you called a white perch (7th pic) looks exaclty like what we call "black crappie" and "speckled perch". I haven't ever had a problem with the bones, but any fish that has lots of bones, like grass carp (sucker fish), when gashed properly and deep fried will be neat to eat as the bones curl up and can be pulled out.
make your gashes about 1/16" apart all the way down the fillet and just deep enough to pass the bones, but not all the way to the skin. Sort of a delicate operation, but with practice it becomes natural. With deer season coming in, I doubt I'll be doing much fishing till spring, but I'll be sure to get some pics of the "gashing" process. It works very well with jack, gar, and sucker, but I must say, I've never had to gash any panfish. there's a few bones along the front dorsal hump (above the head) but if you refrain from eating it like a burger, it shouldn't be a problem.
Fillet, Gash, and Fry. Enjoy. repeat as necessary lol.

That would be Chain Pickerel. You remind me so much of home YCC , I knew what you were talking about, but those close to the coast are probably thinking of the ocean fish known as Jack. Just wanted to clear that up for the Coasties.... We now return you to your regularly scheduled Forum....

I wasn't referring to the Crappie, as Crappie is my favorite freshwater fish. I was refering to white perch there are several in the pic on my second post. Sorry for the confusion.

Ok, back to what I was trying to communicate with this post. I skin my fish!
I know most have seen a catfish skinned. I do fish with scales the same way. To me it is easier and cleaner. First take a look at the catfish below, I took a knife and scored his hide on the perimeter shown in the picture and just pulled the hide off with channel locks. Next notice the Crappie in the bowl done the same way. This way I never expose the internal organs at all cutting just at the top of the air bladder. I can do it this way more efficiently. Lastly fry them up! All that is left is the bones. I even eat the tail like a tater chip. One more thing freshwater white perch has one edible portion in my opinion the tail!!!! I do this with Stripped Bass, Bass, and Panfish. If the fish are a good size I'll fillet but have started thinking large fish should be released.

it does indeed, but beautiful fish. i'm glad you shared.
the way i skin my fish, if they come from dirty water and the fats will foul the taste is to heat a dry skillet up good and hot, slap the fish on there just long enough for the skin to cook and the fats to melt, then flip it with a spatula, so that the skin sticks to the skillet and the flesh comes free, then let it do the same on the other side.
from this point, the fish is raw and the skin is off, but stuck to the pan. i can scrape it free and dispose, and then oil the pan, where the fish will then cook.

it worked a charm the first time i tried it for some old largemouth in a small muddy pond in washington.
i'll have to give your method a try next time.
