*I posted this on another forum but didn't get any takers so I'll ask you guys*
I'm planning a trip in November where I will hike in to a new hunting spot and I have I few questions.
I've done a lot of deer hunting and backpacking, but never at the same time. At my usual hunting locations I just have a short drag to get my deer back to a trail or road and pick it up with a four wheeler or put it in the truck and take it home for processing. The longest I've ever gone before getting the deer strung up on the rack and skinned is a couple of hours tops. On this trip I'm hiking in about six miles and setting up camp with two other guys. We will be at camp for three or four days depending on how long it takes to fill our tag(s). We will be pulling a game cart which is like a gurney with bicycle tires so hauling gear and game won't be a problem. Here are my questions. First, should I gut and hang the deer (to get it off the ground) and just haul it back in one piece with hide intact? Or should I go ahead and skin it and wrap it in a game bag and haul it whole that way. Or just skin and quarter it? I've never processed a deer after rigormortis sets in but I'd imagine it will be a lot tougher if you wait till it gets stiff. It's going to be mid November and cold so I'm not worried about spoilage but the rigor factor concerns me. Also I've always heard that if you wait too long, the hide will be much harder to pull off. I don't know because I've always done it warm. I have always processed deer at a deer camp or at home and would like a few pointers on doing it in the field. Thanks.

I don't have a lot of time so; I'll write something more complete a little later but, as a starter:
A good buddy and I backpack in to the backcountry every year for mule deer and elk. Taking care of the meat properly is paramount. I don't care for anything but european mounts so, I don't worry much about caping out the skull or transporting the hide. With that in mind, here are some basic suggestions.
1. You should field dress and skin the deer as soon as possible. We almost always skin the deer/elk right where it drops - or maybe we'll take it far enough to get to a stand of trees so we can string it up. We then put the meat in cloth bags (I am pretty partial to old pillow cases) for carrying. On occasion, we have used plastic bags to get the meat down to camp, but we get it out of the plastic ASAP so that it can start to age properly.
2. If you are going to have to carry the meat on your back very far at all (even to just get it to your spike camp), you might do well to bone it out completely on the spot and only carry the meat itself (and the skull if it has a nice rack). This will make properly aging the meat more difficult as aging really should be done on the bone, but it can still be done and it's a far cry better than trying to pack all that extra weight.

I have no experience with storage without a big cooler of ice, but if it stays below 40 you can gut/ and skin it and hang it high.

As long as the temp. outside cooperates,skin it out,quarter it,and wrap it up.You can hang it at camp til ur ready to leave.Thats the way we done it a couple years back on a elk hunt,took two of us to pack all the meat out though.
What is this other forum stuff? And we play second fiddle? Well, I never.....

It depends also on the state regulations you'll be hunting in.Most midwestern states require the animsl to remain intact until processed. So the COs that might inspect it can determine gender and other such facts.If temps are 40 and under gut and hang the animals ASAP to cool and drain. Take large containers of ground black pepper with you and coat all exposed flesh with it to keep flys off it.(a trick I learned out west) If above 40 leave the head and cape intact bone out and wrap the meat and put it in a cooler.A 5 day cooler with bags of ice left whole will have enough ice left to cool your meat down even after 3 days,

Always carry enough rope to hang the deer in a tree. I start by hanging it by the head to open the abdomen and remove the guts. If properly skinned the fleshy membrane will stay on the meat and dry quickly into a film much like Saran-Wrap and will keep all but the yellow-jackets away. I know the Georgia Laws require the deer to remain intact until you leave to process it. As long as we are in the bush, the deer must remain whole, save for the guts. We always pack an army style fold up shovel to bury the guts, then flip the deer upside down in the tree (yes, we string him up twice). Then cut the throat to let the blood to reduce spoilage and aid in cooling and curing. Prop the abdomen open with a stick to help cool also.
Being 6 miles in, you might be ok with using the skin (keeping the head intact) as the travel bag and quartering and rewrapping in the skin for hauling. Not exactly whole as the law states, but at least it's all in one "bag" and identifiable for any game authorities should you get checked. Native Americans in this area would butcher the deer completely, and, since they wanted to keep the skin, would use the skin as the "cooler bag".
Rigor is not going to make skinning any harder, and for me, it is usually a little easier than dealing with a "rag-doll". I have skinned on the ground and used the skin as my butchers table in a pinch, removing the guts last with all the meat cleaned first. Bury the bones with or near the guts so other animals may find it. It is important to give some back to the earth and give thanks for your harvest. Rigor won't hurt the meat at all.
field dressing pointers:
#1 priority is keeping any gut-juices from contacting the meat. If it is gut shot, the first thing you need to do is remove the abdominal contents. A sturdy rope will help elevate the deer. Cut the rectum out and tie it off, you can cut the throat and esophagus and tie this off also. (deer hanging by neck). open the abdomen carefully and all the guts should fall out in one neat lump.
#2 priority is cooling the meat. If temps are below 40 prop open the chest cavity with a stick. This will keep fine until temps reach 40 or you reach deer camp. Rigor Mortis wont hurt the meat. If temps are 40 or above, you need to get moving. Its gonna be tough to haul a 5 day cooler 6 miles into the woods and at 45 degrees you start getting into meat spoilage in just a few hours.
#3... you dont need 10 different knives or power saws to quarter and butcher a deer. I have a single Old Timer buckskinner knife that I use from beginning to end of processing. I use one knife to remove skin, head, legs, guts, meat from bone, etc. Less weight to haul 6 miles into the bush. Pack light and practice good processing techniques like preventing cross contamination or just getting dirt everywhere. a good rope, knife, and whetstone is all you really need to process a deer in the bush.
#4 If you start at the neck and work down the belly side of the deer by fisting, his skin will come off like a button-up shirt. I have done this hanging in a tree and on the ground, and is by far the easiest way to skin. it will leave the membrane on the meat and you aren't pulling off the flank muscles in this way. (these are a nice trail snack by the way if you have adequate sun and wind to dry the meat ;) )
#5 and this should really be #1... KNOW THE LAWS! Some states require the deer to be whole (minus guts) until you leave the woods!! If you must process the deer in the field make every note you can on the harvest; approximate weight, points, gender, unusual markings, location, time of day... every detail you can think of. Most CO's will understand that you've been in the bush and had to process it or waste it and they'd rather you not waste it.
#6 and my personal favorite: Thank the earth spirit for blessing you with such a life giving package. I always apologize to the deer for taking it's life and thank it for sustaining myself and my family. It is important to realize our impact on the ecosystem and appreciate our place in the world. I use almost every part of the deer from the skin and brain, to the hoofs and leg bones that most people bury or throw away with the guts.

Looking at the maps, I just found a new way into our spot and the hike in has been reduced to a little over 3 miles. This make things a lot easier and will be close enough to keep a big cooler of ice in the truck. We'll skin and quarter in the field and hike back out with just the deer on the game cart, then ice it down at the truck. Without any other gear the hike back to the spike camp will be easy. The deer will last until everyone else gets theirs (I make the assumption that I get mine first :thumbup:). We break camp and head home.
Thank's for the pointers, I think the trip will be do-able. I'm going to go scout the area this weekend, I know it's a long way off still, but I want to find some good spots for blind locations and look for tracks and scat; and it gives me a good excuse to get back in the woods. I'll probably do another area scout mid-October looking for rubs and scrapes. I might even put out a couple of lick bricks then too.

I've heard of some people hanging deer upside down or slicing the neck and gutting from the chest down....never really saw anyone do it. We gut the deer on the ground immediately unless we don't have to drag it. In that case, we will bring the deer to a v-shaped table we use for gutting and we drop the guts in a wheel barrel and wheel them off to a hole. We never skin a deer until we process it and this could be for several weeks if the temperatures are good. Keep the deer out of the sun and it does need to drop below 40 in the evening. When you bag the deer against flies, don't forget to bag the nose too. Flies get in through the nose and if it is lung shot the nose will have blood which will attract the flies. If you want to know if the bagged deer has any flies in it, put your ear to the bag and slap it's chest with your hand and the flies will buzz if they're in there. Most people don't cut deep enough around the anus, so be prepared to pull on the intestine while you cut around it the second time. There is a membrane between the upper organs and lower organs that must be cut next. Go all the way around this. The gut area is attached to the back and must also be cut away in the same manner or the guts won't drop out. And then cut the esophagus. If the animal is less than 100 lbs I rip the membranes and the esophagus without a knife, only using my hands. Wipe it out very good with a rag until it appears clean and dry. Wring the rag as needed. You can use water if you want to do so and it will not stop the meat from sealing itself despite the old wives tales claiming this. You can use a creek if you want to, but sand is impossible to remove from any part of the meat unless you cut it out so be careful. Keep in mind that animals that can reach the hind quarters while it is hanging will chew on them. If it's a bear then the whole deer will come down and your good steaks will probably be almost all gone.

I dont even bother gutting mine anymore I skin it, cut out the backstraps, hams and shoulders and neck roast and only open the chest enough to get to the tenderloins. The whole carcass gets dumped off and feeds coyotes, possums and buzzards for days. Less chance of contamination, quicker and less messy. I save all my hides as well for tanning.

Stairman, I've done that a few times when the deer was big and too deep in the woods. I'd rather hang it a while to tenderize it and allow me time to process it later. But, if you don't want to hang it or can't hang it due to the weather and you are going to process it soon or put it in the refrigerator, then I'd agree that there is no reason to bother with gutting them. I leave the guts where I drop them and return what I don't want back to the woods.

Most my deer are killed in the back country in AZ. I hunt the Coues Whitetail deer more than mule deer. We hike back in about 15 miles to strat our hunts. They are not a very big deer at full grown size. We gut them on the spot and get the chest opened up to start cooling off. Another thing i do right away is clean the inside with water and that also help cool it down fast.My recomendations are to get it cool as fast as you can, do good clean work. I try to keep all hair and dirt off the meat from the start. We will bone the meat as soon as we can. I can put a whole Coues buck in my badlands 2200 pack boned out and pack it by myself. Another good thing is to hire a packer if you plan on spending alot of days out hunting and helping others tag out. You can call them via sat phone or cell if you have service. they will ride into your location on horse back and pack out your game for you and get it right in to a slaughter house.
I owned and ran Goodman Boys hunting guide service for about 10 years. up until about 2 years ago we had our own mules and horses for packing gear, hunters, and Game. We also used them for bear and Mountain lion hunts to help keep closer to our hounds.
