View Full Version : Storing dehydrated food advice needed.

I've been looking into dehydrated veggies for long term storage but I need a bit of help.
As It's usually just me and wychwood jnr I'm thinking about buying in bulk and then splitting the packs into more manageable portions.
Here comes the question, is this practicable and if so whats the best method? I was thinking canning jars with a dessicant of some sort in there. Would this work? if so whats the best dessicant to use. If not can anyone recommend another method.

There are a number of ways. Do a search on vaccuum sealing (for storage) and carbon dioxide (for oxygen displacement). We have a several threads on these topics.

Definitely a canister, something with volume. Plastic bags and the like that collaspe can hold moisture up against the food which promotes rot.

I imagine those silica dessicants that come with a lot of shoes and other consumer products would be effective, or yes, you could get vacuum canisters.

BTW - the carbon dioxide - I should have also said "dry ice," which is frozen carbon dioxide.

I have found that both vacumm sealing and dry ice work well. You also have to take into account have much storage space you have. With vacumm sealing it takes up less room than if your using canisters. Of course this is just my humble opinion.

One problem I have with vacuum sealing dehydrate foods in bags is that the bag (sometimes) tears. Dehydrated food tends to have sharp edges. One of these vacuum sealers with jars would work nicely.

BTW, when sealed in bags I also store in the freezer (frost free, no moisture).

I once saw resealable cans (with snap ring lids). Wish I could find a source. They, along with the vacuum sealer, would be perfect.

Ummmmm. Since you quoted my post I've gotta ask....did you view the link? It wasn't about bags, but rather vacuum sealing jars.

Yes, I viewed the link. That's why I said "One of these vacuum sealers with jars would work nicely." Meaning one of the sealers on your link with glass jars. No more tearing of bags with my existing bag sealer.

I have come across occasions where I didn't use the full serving of (bagged)dehydrated food. Seems simple to reseal with those tabs. One could just scoop out a serving from the jar then reseal.

I was faced with the same problems, did a little digging and found a bunch of info about how the LDS (Mormon) church runs "canneries"for members. It's probably been posted here before. It's all dry pack canning, i.e. no wet goods, but dried veggies, pasta, rice, wheat etc. They just put it in a can with an oxygen absorber appropriately sized and seal the can.

I found a nice little Ives-way brand can seamer on Ebay for $80, and the guy even threw in a case of cans, the thing was brand new and had all the hardware for sveral sizes of cans. I do #2 1/2 cans, and it's really simple. The oxy absorbers are readily available, and they actually create a slight vacumn in the can. Estimated shelf life for goods stored this way is 20-30 years. No worries about breaking jars, and cans are pretty rodent proof. This outfit sells the equipment and supplies:

dscrick reminded me, I've contacted several dry ice manufacturers and they don't sell to the public, so scratch that one. The vaccum sealer Crash suggested is a possibilty, but I have to do a bit of saving. BUT I can get oxygen absorbers over here! wonders will never cease!
Oh and I've now found a supplier of dried goods in cans, rather like honeyville, but again it's prohibitively expensive. At 40 a can + postage, it works out cheaper to get stuff shipped over from the U.S!!!
Anywho, that's how far I've got.

I know you're just asking about veggies...but on this topic, I'd like to add that anything dehydrated with fat in it, such as meat or fish, will last longer and taste better when stored in the freezer until it's time to use it. Otherwise, when stored for long periods of time, it may become rancid.

Not long ago I read somewhere (naturally, I can't find the source now) that you could make your own CO2 by mixing baking soda and vinegar. The subject was resealing partially filled paint cans so they don't skim over, due to the oxygen in the can. The CO2 is heavier than O2 and displaces it. If I remember correctly, you just mix the two ingredients, then pour the gas off the top into the container. I don't know the proportions but at least the idea sounds logical, easy... and cheap.

You can also blow into the can as you close the lid. The lower O2 content in your exhaled breath will also help prolong the paint. Of course nothing like pure CO2 would.

Here is my recipe for a hearty vegetable soup mix in a can for long term storage. I use TVP as a protein filler, because you can't store dehydrated meats long term (as mentioned in other posts to this thread). No, I'm not a vegetarian. The TVP stores well and adds a lot of protein, it tastes fine. If you have meat, by all means add the real thing when you cook the soup.

RECIPE FOR DRY VEGETABLE SOUP MIX

2 cups dry vegetable mixture
1 & cups TVP
2 vegetable bullion cubes
3 beef bullion cubes
6 tsp tomato powder
1 tsp kosher salt
1 tsp garlic powder
tsp black pepper
tsp chili powder

Add all dry ingredients to can
Place bullion cubes in can
Add oxy absorber packet to can
Seal can


I'll have to post two replies for all the photos. here is the first set:

Photo #1 shows a bulk bag of dried mixed vegetables from Bulk Foods. Potatos, carrots, onions, celery, peppers, etc.

Photo #2 shows the empty cans. These are #2&1/2 sized, enameled on the inside. they come with blank lids unattached. As, well as "Resealable" plastic lids for use after opening. I buy them from http://www.houseofcans.com/

Photo #3 shows the cans being filled with the veggie mix

Additional photos:

Photo#1 shows the cans with TVP added, bullion cubes (wrapped seperately) placed inside, and the oxygen absorber packet placed. You need to cover the can as soon as you put in the oxy absorber because they start working upon exposure to air. I keep unused oxy absorbers in a vacumn packed bag.

Phot #2 shows the new lids in place on the cans. The lids have a sealant under the rim. The can seamer does a double roll crimp operation to completely seal the cans.

Photo #3 shows the can in the seamer with the "Chuck" locked down (the handle on the left does that). There are different sized chuck and baseplate height adjusters for different sized cans. All of that came with the seamer when I bought it. Setup of the seamer is pretty simple, there are two wire guages for setting the rollers, and good instructions included.

Photo #4 shows the seamer in action. All you do is crank. There is a an indicator window with numbers 1 through 4 on top that you watch as you crank. It takes about 8 revolutions to complete. Two sets of seam rollers are in action. The first set rolls the lip of the can over, the second set rolls the lid edge under the rolled lip and crimps it. Totally automatic and slicker than snot!

Photo, #5. The completed, labeled cans ready to store. Excuse my "GI" labeling style, old habits. I print the labels on the PC, including the cooking directions. This recipe makes a big pot of damn tasty soup by the way. Add some fresh venison or a rabbit and you are really eating.

I just realized the photo of the labeled cans doesn't show the cooking instructions clearly. Here they are:

TO COOK:
OPEN CAN AND REMOVE OXY ABSORBER
REMOVE BULLION CUBES AND SET ASIDE
EMPTY CONTENTS OF PAN INTO POT
ADD 10-12 CUPS OF WATER
UNWRAP BULLION CUBES AND ADD TO POT
ADD FRESH MEAT AS DESIRED
BRING TO A BOIL THEN REDUCE HEAT
SIMMER 45 MINUTES
ADD ADDITIONAL SEASONING AS DESIRED

This recipe could of course be used in Mason jars or vacumn bags just as easily, but I would store them in a cool dark place, Light can adversly affect dried foods.

Appreciate the comments. I also put up staples like macaroni, dried beans, salt, sugar (NO OXY ABSORBERS IN SUGAR - LDS WEBSITE SAYS THEY CAUSE ISSUES), flour, etc.. Anything dry can be stored this way.

It's also a good way to store ammo by the way, I put a dessicant pak in instead of the oxy absorber
