In the past I have had people not understand why I would hunt rather than buy the majority of my meat from a store. This is one of my reasons. I have never had my moose, caribou or ptarmigan recalled. I handle it from the time it stops moving until it feeds my family and am reasonably confident that it is not going to get us sick. I feel bad for anybody who got a hold of that tainted shipment and hope they are doing alright.

Absolutely! amen brother! high five! standing ovation! I cannot possibly agree more! But try telling that to people and you get these vacuous, hundred yard stare..... or you get...but they're sooo cute and harmless...well, so are calves and lambs until they go through some weird processing plant and come out tainted on the other end. No longer harmless.

Don't quite know what you mean about extra. I gut out a kill and skin and quarter it and take the larger pieces in the field and pack 'em out. Nice to have cheesecloth to wrap everything in if possible. Keep everything as clean as possible too. I hang the meat , how long depends on the weather, before cutting it up and just keep the cutting table, knives grinder etc etc as clean as possible while I work. Never had a problem yet.

WHen we butchered at home as a kid,we bleached everything possible before the animal was put down,gave it plenty of time for the smell to dissipate before the meat was put on the table to cut up,was just curious if you did the same.

Yeah, I've tried doing that but I just can't get the moose and the caribou to stand on the spots that I've bleached before I shoot them hun. I clean all of my meat cutting area with bleach, does that count?

But then again I'm also one of those people who believe if you have everything disinfected and super-clean, it will weaken your immune system (no antibodies being built for the tiny controllable amount of illnesses entering you on a regular dirty basis) so then when you are exposed to even a small bit of illness, you can get ill very easily.

For all you old people who have no use for knowing why it scientifically happens: if it doesn't kill you, it only makes you stronger (or in this case, more immune).

Couple of questions AP. How many members of the deer family have you gutted and cut up in the field? It's pretty tricky keeping them clean and you better get them guts out in a hurry. There's a big difference between accepting a few antibodies in your life and having a couple hundred pounds of meat that isn't edible. What the heck is that shot about "all you old people?" There's been a few folks in the past wanted to prevent me from becoming an old person, here I am. The expresssion 'that which doesn't kill me makes me stronger' isn't new or young. Seems to me that he who throws dirt is losing ground.

Yup, as usual Trax pretty much summed it up. Keep the meet as clean and dry as you possibly can in the field (that includes keeping as much hair, stomach contents and flies off the meat as you can) and keep your equipment as clean as you can while you work...bleach is nice... and you shouldn't have any problems. I am not even going to talk about sloppy hunters who fill their tag and let the meat spoil from neglect or improper handling.:mad: That is one of those things that gets me to ranting.

Thanks AKS, and yeah, I've seen those booby-hatch bast*rds out there often enough, it's one of those things that even thinking about it I start to get p***ed off.

Yet another example why I gave up on ground meat.
Yes I know "cuts" or whole carcass can also be contaminated but it seam ground whatever is the most frequent offender.
If I want ground meat I just buy whole cuts, clean surface and equipment well and grind it myself.
Never had a problem.
I know this doesn’t eliminate all risks but it substantially cuts them down.
