Has anyone used a canner over an open flame such as a campfire pit or charcoal? Any special considerations? Is heat control to critical to do this?
I have not but I think you hit on the biggest problem namely temp control for pressure canners. That would not be as big a problem with water bath since you only need to bring the water to boiling assuming you maintain a boil for the cycle.

From my understanding of the "science" behind canning, you are creating an environment to kill harmful bacteria using sufficient heat and duration to make the item safe for long-term shelf storage. There are numerous variables which come into consideration. The type of food you're preserving and relative atmospheric pressure are perhaps the most critical in achieving the desired results. This is why many recipes call for different vent weighting at different altitudes for the same food.
Water at mean sea level boils at 212 degrees F. By adding 10 lbs of pressure to the system you raise the boiling point to 235 degrees F (at sea level). For 15 lbs the boiling point rises to 250 (again all @ MSL). The boiling point drops approximately 1 degree F for each 500 feet gained in altitude. At 7500 feet altitude, under normal atmospheric pressure, water will boil at around 198 degrees F. The source of heat isn't relevant so long as it is capable of maintaining a temperature ABOVE these levels for the ENTIRE process.
So to answer your question, YES, controlling heat is critical to the process. Without sufficient heat for the entire time you run the risk of allowing harmful bacteria to survive the canning process.

Check your history,
Canning becme a popular food preservation method long before electric and gas ranges existed. It was a popular method before WOOD cooking ranges existed! It was a popular food preservation method before preasure cookers existed!
Canning can be accomplished over any heat scource that will give you proper temp to kill bacteria and seal the jars. Same temps needed to purify water.

I can understand canning over an open fire or building up a hearth for the purpose in the back yard during a long term power outage but this is not an activity one will undertake in the wilderness on a backpacking trip.

Why?
I can understand canning over an open fire or building up a hearth for the purpose in the back yard during a long term power outage but this is not an activity one will undertake in the wilderness on a backpacking trip.
It will be a fixture at the BOL...if it works the way I hope.
Very controllable heat....minimal fuel....no smoke.
I have all the pieces cut to make one of these...but 32" tall with a damper....

It was designed for heating wash water at the BOL.....for washing clothes.

You need temperature control for a consomme or something. Maybe to make a nice french sauce. sou vide or whatever they call it.
You don't need control for canning, you just need enough BTUs to heat water to boiling, so long as you follow rules for processing times it doesn't matter what the heat source is. You need heat strong enough to boil water and keep it boiling, but since you can't burn water there is no harm aiming high.

unless you crack your canner....
Need to achieve boil and maintain.....no need to put a blow torch under it.
Fuel consumption may be an issue if you are canning with a woodfire.

Obviously you do not live east of the Mississippi. I can forage the fence rows within sight of my house for twigs and can half the world produce.
And canning foods is possible without a preasure cooker. My Mom canned for her whole life and would not have a preasure cooker in the house.
They were not sold for home use until the late 1930s and home canning and preserving had been going on for many years at that time.
It may be that being from the south we prefered out meats preserved in other ways and most canning was fruits and vegetables that did not need the preasure cooker treatment. We also did not cook the food in the cans, that was done after the can was opened, so all that was needed was enough heat to bring the entire contents to bacteria killing temp for a few moments.
They even canned jellies and preserves using wax as a seal and no expensive lid was required.

The nice lady who taught me to can wouldn't be caught dead near a pressure cooker, not even an electric one. Her canning history spanned 50 years.

If, however, you want to can meats or low acid foods (above 4.5 pH) they must be canned in a pressure canner to insure adequate food safety. Your mother, grandmothers, and those nice ladies in the neighborhood who taught you canning probably understood this. Chances are if you take a look at their recipes you will see they called for the addition of some type of acid that made it acidic enough to prevent botulism from spoiling the food. If you want to can it safely without the addition of this acid you will need the higher temperatures which a pressurized canning environment offers.

Like I said before, preasure cookers were not even available for home canning before the late 1930s and women had canned everything they could get their hands on for 100 years before that.
Meats were not canned. Meats were smoked, salted and brined. That was our prefered method of preservation rather than cooking it to mush and canning it. The mere suggestion of canning a cow or a whole hog would have gotten you laughed off the farm. Small stock, like chickens, were left on the run until processed and consumed.
The trick is not adding acid, it is cooking the food after it comes out of the jar. It was not luck, it was an educated procedure.
Preasure cookers were considered an explosive device on a par with dynimite in my family. Everyone knew someone that had been scalded, scared or killed by one of those early preasure cookers and most peole would have nothing to do with them. No one owned one, yet no one died from the canning process. We cooked the food when it came out of the can rather than just "warming it up". I never heard of anerobic bactera until I was a teen and store bought tuna began killing off Kroger customers.
If one simply must can meats a preasure cooker would be recommended, but most people I knew prefered to no can meat and the water bath was sufficient for all the corn, beans Tomatoes and any other vegetable we got our hands on.

With all due respect KY, the home canning standards presently adopted by the USDA do seem to differ from your life's experiences. I suspect, like anything else the government gets its hands on, that this has been dumbed down to the lowest common denominator. The American consumer has come to expect that the canned vegetables he/she buys at the supermarket are safe to eat without any further cooking/heating necessary. I also suspect that government guidlines for home canning are intentionally consistent with industry standards so as not to confuse the end user. True, the botulism toxin can be denatured by heating food to 176 degrees F, [http://en.wikipedia.org/wiki/Botulinum_toxin] but why introduce it into your food stores in the first place? Pressure cooking has inherent dangers but with a little knowledge and some common sense I don't see much risk in using one. Do we still travel by horseless carriage? Do we dare use Westinghouse's frightening electricity? Heck just waking up in the morning presents its own set of risks!
We've all heard of some canner horror stories, and likely many of our ancestors considered them too dangerous to have in their homes. My point is that we are vastly better informed today and have access to so much more instant information that it should remove any and all mystery behind the safe use of pressure cookers and canners.

The new regs are the reason you can have home canned food with a "as good as" or better than commercial expiration dates.
While a lot of people canned without pressure cookers how many became ill or died from food poisoning? Please, let's not assume that just because something was or wasn't done that it means it was the right or correct way to do it or that it was entirely safe. It might have been safe enough but ......
A lot of folks have canned by sealing their food with wax but that's not recommended any more either. I'll stick with the USDA recommendations for my food and would strongly encourage others to do the same.

I've seen both ends of the spectrum....Beans that were nasty after 1 year....and beans from 8 years back that tasted fine.
My grand parents always canned enough to last through the season....because the potential was there for spoilage due to contamination.
There was never really an issue with it...but they planned accordingly with how much they stored.
The Mrs and myself had never had an issue with anything we've done using a pressure canner....they are awesome pieces of equipment.

By all means, take your food prep advice from the same people that brought you FEMA, the TSA and nationwide morbid obesity through recommended high carb diets of the "food pyrimid".
We have threads here with instructions for cooking bugs and crubs and straining puddle water through tee shirts and you guys are worried about the safety water bath canning??

The advice comes from years and years of commercial and home canning, and real world statistical data.
The technology is there.....it's not that expensive....and the results are overwhelmingly superior.
The real question would be....Why wouldn't you?
The FDA has nothing to gain from home canning....other than the safety of the folks doing it.
All the major canning supply manufacturers have concurred with the newer guidelines.....not to say grandma was wrong....but there is a better way to do it.
If it doesn't add a unreasonable amount of cost....while at the same time adding a layer of safety for my family and my stores.....well....yippy...:)

There is a difference between a pressure cooker and a pressure canner. There is the still controversy of canning meat. Many have been pressure canning raw and cooked meats for decades, while others say no raw meat but will can meats they have cooked like hamburger and sausage.
I have not decided if I am going to can raw or cooked meat. I think cooked meat would be safer. I am thinking best thing to do is make sauces, soups, stews and chili's with meat and can the whole meal. I have watched several ladies videos on canning on youtube. Wendy DeWitt has an excellent food storage system she has used for 30+yrs. She cans raw meat. Some popular you tube homesteader food prep ladies, some can raw some can cooked.
Debate is still up in the air over, however when you see women on you tube who have been canning raw meat for 30+ years I'd say it can be done and if this is the only way you can put meat away for your family, then learn how.

There is a difference between a pressure cooker and a pressure canner.
What's the difference....I've used my All American for both.
You can get away with using your pressure canner for cooking. You don't want to do it the other way around.

Personally, I wouldn't bother canning raw meat. I put that stuff back in case I need it in an emergency. Having meat already cook will put you ahead of the game in terms of fuel, whatever kind you use.

You can get away with using your pressure canner for cooking. You don't want to do it the other way around.
Gotcha.....wasn't thinking the other way around.....Never actually used a sole purpose pressure cooker.
Have you ever cooked high acid foods like tomatoes in it? I'd think the aluminum would be a problem. I don't pressure cook anything although I do find it an interesting approach.

The Mrs has made beans once.....and has made fried chicken once.
The Chicken was good but she said clean up was a PITA.....the beans just cooked really fast.
My grandma used to do beef roast in her Presto....but it was stainless steel.
Probably wouldn't be good to do a bunch of tomatoes in aluminum.

You sure don't want to be cooking high acid foods in aluminum.
Not even grannyware with chipped enamel.
Using aluminum for boiling water bath or pressure canning is fine. No food contact.
As for KYrat's argument, I'm sure if you read through his grandma's recipes for boiled water canning most items were either pickled or heavily sugared.
A big problem with meats and chilis is the grease. You have to be absolutely certain none of that gets on the rim or your seal will fail.
I've only practiced canning meat in case my freezer goes out for longer than the generator can hang on. Last time I lost my freezer we had a neighborhood BBQ rather than waste it.
Not going to happen again. I have a wood fire method for boiling water.
I only tend to can what I can use in a year though a few things have hung around an extra few months. Haven't gotten to the sustenance level yet. Certainly not enough for The Family.
I've been using pickle-type recipes of my grandmother's for years and still use the recipes in a 2nd edition of Putting Food By. Sure you can abide by the USDA guidelines and ONLY use the 'official' recipes that have been tested.
But has anyone noticed that the current trend to promote pre-packaged mixes? Pretty soon I can see the guidelines saying it is only safe to use certain pre-mixed packaged crap for your canned goods. Several of the canning classes in this area recently focused on using the Ball premixes. Yuppies don't want to be bothered with measuring spoons and buying individual ingredients or actually thinking about what they are doing. They think what they are doing is 'prepping'. WhatEVer.

The pressure cooking we've done was more of an experiment...the chicken was quite tasty.
Personally I like slow cooked beans anyway....:)
I could see the validity of cooking dried beans by pressure cooking for the fuel conservation end of things.
