I'm familiar with the basic process. Heating the cheese, applying the rennet, heating higher (temperature controlled depending on whether or not you want a hard or soft cheese,) then finally cutting, salting, and pressing the curds.
I am however at a loss, I have been searching most of the day and have yet to find someone who uses homemade cultures for their cheese making. I understand the dangers but, while I have everything to make cheese sitting in the cupboard and some pre-made cultures in the freezer, I have been wondering how one would go about producing their own cultures from scratch. It's the only part of the process that I'm missing from my current cookbook on the subject and it's bothering me.
Are you wanting a starter culture or do you actually want to capture your own bacteria? I have no idea how you would do the latter or even do it safely.

I was wondering on how to produce the starter culture from scratch. I have some right now that came in the kit but in a long term wilderness situation, planned most likely, things like that will be few and far between. You don't really need the cultures to make standard cheeses, but flavoring them isn't very easy without them.

Are you making your standard cheeses from raw milk? That is the only why I know how to make a standard cheese without culture. I don't know much about it except when you clabber milk and get your "curds and whey" you can age it and get it sharp or use it sooner and it will be mild. Then throw it in a mold with a weight and wait. I've done it from time to time. There is no way I am aware of that you can do that from pasteurized milk without a culture. It turns into that inedible thing that people call sour milk. Tell me if there is a way to clabber pasteurized milk without culture if there is one. Have you ever tried to introduce culture from a piece of store bought cheese? A goat or a cow that turns green grass or leaves into milk is an amazing machine. It's hard to own a better animal if you are dirt poor or if anything like SHTF situation ever were to happen. Without researching, I would guess that at one time they introduced cultures from added ingredients to the milk since milk always seems to clabber the same each time. Interesting subject.

I was talking about raw milk.
If you want to use pasteurized milk, I was told that a scoop of yogurt, or to add some buttermilk. That seems to work, my brother tried and got something akin to cheese.
That was my thought, I know that you can spice cheese if you mix a bit of tea in the whey before soaking the curds, if you dried them. Either way, I found a few interesting things on the subject but I've still got to sort through it all to find new bits.
edr - You can use also use lemon juice with pasteurized milk. You end up with a soft cheese like cream cheese. I posted on it a couple of weeks ago. I didn't add any flavors to it so it was fairly bland with a hint of dairy but good nonetheless.
KofD - You're out of my league on the starter from scratch. Sorry.

without controled temperatures you will have a difficult time with consistancy in your culture. A few ounces directly from a milking animal curdles in 1-2 days @ 70-72 degrees f. in a sterilized jar. Add a half t. of this curdled milk to one cup of sterilized milk and incubate @ 68-70 degrees for about 16 hours. This will be your "mother" culture. You can store this for up to 4 days @ 38 degrees w/o loss of activity. If you keep re-inoculating fresh milk with it perpetually it will gradually change as certain strains gain dominance over others. Milk is sterile in the cow and catches certain bacteria as it leaves the teet. Make sure your teets are cleaned of all fecal matter. If you are able to freeze this mother right off it will keep for a month in this state. I would recommend using your freeze dried cultures to begin your mother as the right bugs are already there and it will save you time. Of course if you are Robinson Crusoe and have to start from scratch, you do what you have to do. If your cheese has an "off" flavor, you didn't get the right bugs and will have to keep trying until it turns out to your liking. There are advantages to living in the modern world. But once you have a good strain you can keep it going for some time as long as you keep it cold after the initial incubation. Storing the milk for a while at a cold temp prior to inoculation is inadviseable as there are non-desirable bacteria that thrive in cold temps. Feel free to ask if you have questions, I'm not sure I have been clear. Hope this helps.
Edit: this is for making a mesophillic type culture that will start to die off if you cook your curd to over 102 degrees.
I'm assuming you are saying the milk curdles because of bacterial contamination? Obviously, some of the bacteria is wanted.
It would be interesting to know how it was done in the middle ages since starters of all kinds were required for everything from cheese to bread to alcohol.

Yes, the milk will curdle because the lactose eating, lactic acid secreting bacteria have driven the acidity of the milk to the point where the polar membrane of the protein is broken down, causing it to release calcium phosphate which acts as a sort of glue adhering the proteins to each other forming what we know as "curd."
Various bacteria or "cultures" will accomplish this. The key is to get the right ones. You can make perfectly healthy, safe cheese that tastes bad with the wrong bugs as long as you reach the proper acidity. If the curd doesn't have a tang, I wouldn't trust it.
I could be wrong ,but I believe in the middle ages cheese making was a routine chore. All you would have to do was take a slug of the whey from the previous day to inoculate that batch. Occasionally, I believe it would still have been necessary to start a new culture as phage would severely limit the activity of that strain. Raw milk left on it's own will eventually curdle, it wants to become cheese. The cheesemakers job is to help it in the right direction.

No prob rick. I do have a ph tester made by Hanna. I think it ran me around $80 several years ago, but if you wanted to test it there are ph strips that I think are fairly inexpensive. I remember back when I was just starting out, my consultant told me that when he was studying cheese over in Europe that they almost never did a ph or acid test. They just tasted the cheese to see that it was "right." He would then follow them around with a ph meter and found they bwere "right" every time. I met a lady once who made a decent cheese at home. she used a "measurement" she called "definite acidity." this was accomplished by trying a piece of the curd and saying "it's definitely acidic." I don't make an acid coagulated cheese, only rennet cheese. My target ph is generally in the range of 5.2 but for the acid cheeses you are right on with 4.6. I'm still working on my "ph palate," so when I am deserted on an island full of goats I'll have things under control ;)

When you're on an island full of goats, you'd have everything you need to rennet cheese. So long as you can distill the salt water around you to get salt, you can butcher a goat and harvest rennet from a part of it's stomach. I'd have to dig around for the diagrams but it's not that hard to get. The younger the goat the better.

True that KoD! Yep, you would probably still want it suckling so those enzymes are still active. I tried that once with a veal calf and couldn't get the stink off of my hands for two days. I gave up on the stomach because it smelled so bad. I'm sure someone has a way to process those without barfing, and when I hear of it I'll try that expirament again :ohmy:

On a side note, there are also many plants that can be used to make rennet. Nettle, mallow, bedstraw, and I have heard some ferns as well. Never tried that one but plan to someday.

The problem with using vegetable rennet is that you have to use a lot of salt. The salt retards the mold and makes it almost impossible to get anything more then a soft cheese.
A trick with the stomach that I've heard of is to not let the animal eat for around a day. There is however a few ways to go about it. Most instructions about cleaning and prepping the stomach tell you to wash it. However, a large portion of the enzyme is in the mucus that coats the inside of the stomach. It's best to apply the salt quickly and store the dried stomach packed in salt. As for the odor, there isn't much that you can do about it. You just have to get used to it. It will be much less dramatic the quicker you salt it.
I'm going to guess that you know not to use iodized salt. The iodine kills the bacteria. Do you use a cheese salt? (This is another area I'm not very knowledgeable in - There are soooo many).
Besides Rennet do you use Lipase in your cheese?

You could use cheese salt, but with the stomach I'm not trying for bacteria. Just an enzyme which is produced by it. Natural salt is what I've been told.
EDIT: Just rennet. The same recipe my brother has been using for a few years.
Sorry, I misunderstood your post. I thought the first paragraph was other than the stomach.

He said that the only reason Americans have grown accustomed to that flavor is because Europe has been sending us their junk cheese for so long. I don't know about that, but I do have a friend who used to make a cow's milk manchego (with lipase) for some time and I have to confess I didn't much care for his cheese. But I say, if you like it use it.
As for salt, I buy Cargill's additive free sea salt in eighty pound bags. They average about $15 a bag. About the only thing that prices seem to be going down on as of late.
KoD- do you have a recipe for making rennet you can share with us? Looking forward to trying this again, but the recipe I have calls for thouroghly washing it.

It's more of a guide, not so much a recipe. I found this (http://biology.clc.uc.edu/fankhauser/Cheese/Rennet/rennet_preparation.html) site which helped a lot where my brother seemed to leave out. Since the process is the same I figure this would be easier then trying to explain it all myself. In step 7 they talk about blowing it up like a balloon and letting it dry. I've been told that works really well if you live an area with low humidity. Though I've not heard of it being used before I read that page.

My experiences at making cheese amounts to making yogurt or buttermilk by putting a few spoonfuls into a gallon or so of milk, as Knight of disorder mentioned, and putting it on top of the truck in the summer or by the stove in the winter or throwing it in a collander or a couple plates and a rock to drain. It makes decent cream cheese. I never got beyond that. When I have put yogurt or buttermilk into a gallon of unboiled pasturized milk I consistantly get a good flavored product, but when I try to use this product as a culture for a second generation culture (unboiled) it consistantly gets an off flavor....as Mountainmark mentioned.
My cousin liked what Rick mentioned about the lemons and milk. I've bought a lot of cheese made by this method (with vinegar) at markets. It's not a gourmet's cheese, but I prefer it over most cheeses. I always prefered the oldest milk from the milk goats my parents had. Everyone else liked the freshest milk so it worked out good for me. I've continued to prefer cultured milk since that time and I've found that if you put some yogurt in fresh milk it won't sour, but instead, in time, will change to a mild yogurt flavor. I have never found a yogurt on the market that did not have an active culture that could be used to culture milk. I was wondering if cheese might also be the same in the supermarket. Is it or isn't it an active culture and could you use it in the place of purchased cultures?

If it's processed then that's a no, they add a whole bunch of things to it so it melts quicker and stays longer.
I'm not sure about block cheese that's right out though. Blue Cheese might work like that, maybe a couple other from the gourmet shops. Actually, so long as they don't heat treat the cheese it should work to a degree. I know when making cheese that's waxed and aged, you can literally leave it for years and still eat it later. Not sure how good it would taste though.
Who is the guy that has the job of tasting stuff after it's been out for years?

Ed, sounds like you have been having fun with dairy ;) I think it's a great survival skill to have (not necessarily wilderness survival) but great to know how to preserve milk! If at some point you want to get into longer aging rennet cheese, I wouild love to help any way I can.
As to your question about using aged cheese to culture a new batch, my thought is you might get some of the right lactobacillus in there but not much more than you will find in the raw milk itself. My reason for saying this is much of the original bacteria dies early on on the aging process, or in the brining/salting process and essentially their bodies become food for other bacteria that later die and create the complex flavor profiles found in aged cheese. I am not a microbiologist and would have trouble explaining or even fully understanding the intricacies of this, but this is what people who know far more than myself have told me. Not saying it wouldn't be worth a try, I'm always for expiramenting :detective:
