Wild Elderberries

There things grow by my house. I didn't know what they were untill I pointed them out to my mom and she told me they were edible. They're very bitter, I'm not sure if you can soak them to remove the bitterness, I've never tried it. They are purple, and grow on a reddish purplish plant.

My late Grandmother made the best elderberry jam in western PA. She taught my Mom well. I think a lot of sugar was used.

You can't soak them, but if you pay attention to which ones the birds are going after first you will find they are the sweetest. I found that out in this video. You gotta beat the birds to get the good ones. These were the most bitter I had ate, but ended up making a decent juice which I used as a tonic of sorts, a shot here and there, as they are quite good for you. Adding some sweetener might reduce the bitterness, or hide it somewhat.

In my recent jelly-making experience... If you add enough sugar to anything bitter, it will taste good LOL.

Elderberries are not quite ripe yet on the bushes I've been watching for harvest, but I am going to make some elderberry jelly this year (if I catch them at the right time for harvest), and I'll let you know how they tastes. Similarly, our plum bushes produce plums with a particularly sour skin, and the resulting jelly is very good.
