Brutal Cold In The Swamp! -18 deg.

I am pretty sure global cooling is actually happening down here in the swamps of SC! I am real sure we no longer have musquitoes and hoping there is a possibility they may become extinct! As for our gators they are suddenly missing just poof! no dead bodies, no sign of 'em anywhere! I am also absolutely sure I wasn't meant to be subjected to these temperatures! I think myself, as well as the skeeters and gators have been caught off guard! Breaking ice from the horse trough day and night was not in the plan! Neither was getting knocked violently in the head by my "new" horse while adding boiling water to his water on my lunch break! Learning some painful lessons about cold down here. Please keep me and the gators in your thoughts!

Grilled Alligator Tail


INGREDIENTS:
4 Alligator tail steaks about 3/4-inches thick
2 cups milk for marinade
1/2 teaspoon fresh ground black pepper
1/4 teaspoon cayenne pepper
1 tablespoon rosemary
1 teaspoon red pepper flakes


DIRECTIONS:
Place milk in a deep bowl, add pepper flakes and rosemary. Season meat with black and cayenne peppers. Place meat in the bowl, add milk and cover. Let marinate 3-4 hours.


Remove meat from marinade, discard marinade. Pat the meat dry with a paper towel. Add more red and black pepper to the alligator meat. Add salt to taste.


Brush meat with olive oil and grill over a hot grill, about 10 minutes each side, brushing with oil when you turn the meat.

"American alligators hibernate during the winter in burrows (or "dens") that they construct, but may occasionally emerge during brief spells of warmer weather.
Alligators do not feed during the cooler months. Studies in captivity have shown that alligators generally begin to lose their appetite below 27°C (80°F), and stop feeding altogether below 23°C (73°F). They can easily last the winter on their energy reserves.
Adult alligators can survive freezing conditions if they are in water. They submerge their body but keep their nostrils projecting above the water surface, so that when the surface freezes they can still breathe (called the "icing response"). Essentially their upper body becomes trapped in the ice. However, occasionally alligators may be trapped completely below ice, and have been known to survive for over 8 hours without taking a breath, because the freezing water slows their metabolic rate down to very low levels. Yet another example of their amazing ability to survive.
As of May 2006, there have been 19 confirmed fatalities caused by alligators in the State of Florida since records began in 1948."

Hunter, I have eaten' my share, but only dressed a few for the grill. We did not make any special effort to remove all of the fat. These were under 4ft. I can't seem to get drawn for a hunt thus far! You guys will know when I do!

Their metabolism slows down so much that they appear dead. They are not - as some folks found out after bringing them inside with plans for their hides. As soon as they warm up they are back to normal. I'll bet that some thought they had caught zombie Iguanas.

After catching, cleaning, and eating my fair share of gators this is my take on them. Being a reptile, they usually don't have alot of fat to fool with. Like alot of wild game, the fat is not particularly tasty and can cause the meat to spoil more prematurely. So, yes, it should be mostly removed but that is not usually a problem because there is so little. Once in a while you may get a "fat" one but it ain't real often. This is just my particular dealings. By the way, the meat is soooo good you'll be whistling Dixie. For those who haven't, trust me, it's well worth just trying it out. You'll probably find the "other, other, other white" meat to be really good. just a foot note, the gators complain about really cold (20 degree) weather too.
