Chantarelles

The Lady and I went up into the mountains today. I'll be putting other pictures up later, but I was already sharing this one with somebody and thought I'd post it here. Cantharellus cascadensis; the cascade chantarelle:

It is one of a few chantarelle species which can be found in California, and like a couple of them; is quite robust. This specimen was around 2lb. Sadly, it was a little past it's prime for cooking and was the only one we found. We also found a couple of scaly chants (Gomphus floccosus), which I am one of those unable to eat without digestive complaints.

The diversity of mushrooms around was a bit sparse, consisting mostly of various Mycena species and a near carpet of Hypholoma capnoides.

Hopefully the rain this weekend and several more days of suitable growing conditions will get things kicked off for the next trip; likely the last before the cold ends the season.

btw: the picture is a big washed out, i had to take it without flash, to conserve battery life and the auto white balance is terrible on my camera.

and no; they are almost certainly mycorrhizae, so they can not be cultivated as saprophytes.

A 2 lb. chant, wow. I know the season is pretty much over here when folks on the west coast start finding.

yeah; the white chants, cascade, coastal and california varieties get pretty big. the taxa are still in flux, but the distinctness of the forms is pretty clear cut, and they blow the varieties usually [falsely] grouped into C. cibarius away.

popularly they would be considered Cantharellus cascadensis, C. subalbidus, C. formusus and C. californicus.

it is commonly held that the american C. cibarius is genetically distinct from the old world form (as is common with old world taxa applied to new world material), and it has even been questioned whether the old world C. cibarius is a fair match for the original monograph.

something about either the way my brain has been programmed, or the mushroom itself, doesn't look appetizing at all (probably my brain). I hope that in another year or two, I can take up shrooming. I came across a stand of really neat looking yellow and purple mushrooms (2 different ones).
Demolished another phone last week, so I gotta dig for the pictures on the card, but I'll try to post them soon.

oh; they are wonderfull. they're beautiful mushrooms too, especially in person. what you can't see in the picture is the warm golden coloration.

wow, they have a nice buckskin color to them, and the way they colonize makes a nice piece of art.. which is the best kind of art; that which can only been pondered but a moment, then fades away into time.
I'm not a big fan of the texture of mushrooms (but I am a fan of filling a hungry belly), so I must ask, how do they taste?

in a word: ephemeral. evanescent works as well.

well; disliking the texture of mushrooms is a very hard thing to do; as they have such a range of textures. from fluffy, to crisp but lofty, to crumbly, to the down right chewy, gummy, cartilaginous. some are soft with a pleasant grain; there's just such diversity from one species to another. compare fresh Agaricus agustus to fresh Boletus edulis, to crispy fried chantarelles to sauteed lobster mushroom, to stewed Hericium to tempura puffballs.

as for the taste: like many of the fine foods in the world, they taste only like themselves; wonderful, though amongst some relatives the flavor is similar. prepared right, they could easily substitute a tender and subtly flavored meat. alternately, a rich, earthy cheese flavor ideal for creme sauces.

I'm only familiar with the kind you buy at the grocery store. Those I don't like so much. It sounds like the wild versions are a bit of a delicacy! Thanks CanID.
I don't mind portabello's so much (those are the big ones at resturaunts, right?), and certainly didn't realize there was such a variety of textures.

It could also be said that once you eat a poisonous mushroom, you never go back. Just sayin'.

That goes without saying, however if you know what your looking for, its not to hard to distinguish, that is unless your trying to positively id a Russula species. Morchella's , Cantharellus, Boletus and Pleurotus are easily id'd by a person with a fraction of knowledge. Its when your trying to ID the Amanita's, Agaricus's is when it can get hairy and downright fatal.
