LOL, Rick! Only this year did I add my sister. Before I only did my parents' generation and up. Might be a while before I add cousins. ;)

My aunt and uncle sent me a country ham from Kentucky. So I HAD to make buttermilk biscuits.

My wife is fixing dinner for the tribe so I spent the afternoon Christmas eve baking pies. On the menu are:

Reheating some Ham today. Tater salad is done and in the fridge. Green beans are thawed out and stewing in chicken broth with onions and bacon. Those are our contributions. Don't know what the rest of the family will bring. :drink:

Thanks for the idea, 2dumb! Just made my own 'mater soup. 2 cups of milk and a splash of cream in a saucepan, add a small can of tomato paste, a few squirts of ketchup, a couple dashes of salt, some black pepper and garlic powder That's it. Better'n Campbells!

Having it right now with a grilled ham 'n cheese sandwich. :thumbup1:

2dumb, I was out of Campbells Tomato. This was an experiment. I'm glad I ran out of Campbells. I'll never buy it again.

I don't know if I'd get that carried away. Canned soup last a pretty long time, on the shelf. Not to mention that it's danged convenient.

Oh yeah....I forgot to say that Campbells soup was on sale the other day. Four packs of either 'mater or chicken noodle for $2. Heck...Campbells soup for 50 cents a can, I had to grab a mess of it. LOL:smartass:

Today we had buttered brown rice with chives, homegrown acorn squash and canned moose (a mix of meat, heart and liver).
Yes, that is a nail by the plate. Always be prepared! There's a roll of duct tape and a drill bit on the table, too. And no, we don't believe in small portions.

My other half doesn't like beans, so it isn't very often that I fix any. And when I do, it's just me trying to eat the whole pot of beans. It isn't pretty......or pleasant smelling! LOL:bored:

I usually soak mine overnight, change the water, and cook them.

In Mexico, they add some epazote (Dysphania ambrosioides) to them for that purpose, and for flavor.

I boiled some eggs.
I usually add salt but this time I added baking soda. It supposedly lowers the Ph of the egg shell and makes it easier to peel. The one I ate did seem to peel easier but, I'm still skeptical.
Does anyone else use the baking soda method?

That's very true. A friend that I used to work wit lives in Palm Coast (about halfway between Jacksonville and Daytona). He was a lieutenant, then captain in the volunteer fire department. He has a very heavy Brooklyn accent. One day I asked him if his accent ever got him in trouble? He said that people that didn't have his accent got in trouble in Palm Coast. In the years since that comment I have had many occasions to be in Palm Coast. I have asked several dozen residents where they were originally from. Without exception - New York.

I grew up in Central Florida. It was a mix of natives and non-natives there. Then I moved down to Port St. Lucie.

EVERYONE was from New York. And every small business was named "Big Apple" this and "NYC" that. It was crazy!

My mom said that it was because the whole city was a development planned by General Development. They sold the hell out of the properties up in the New York in the 80s.

For the record, I'm Florida-born -- though only first generation. My family all hail from WV.

Last night I made my version of tandoori chicken. It's kind of a standard at our house.

I slice the chicken breasts horizontally, and marinate them all day in plain yogurt, lemon juice, tandoori seasoning, olive oil, and sambal oelek. Then, without wiping off the marinade, chuck them on a hot grill, for about 4 minutes on each side.

On the side some kabocha squash with soy sauce and sorghum molassas, and homegrown swiss chard and amaranth greens, sauteed in homemade chicken broth abd apple cider vinegar.

Cool! You'll probably only need to marinate those shrimp for an hour at the most.

With the enzymes in the yogurt and the acid in the lemon juice, you might end up with ceviche!

London Broil was on sale for 1.99 a pound,, so on the BBQ,,, this is only half of it, I had to cut it up because I am low on Propane ,, I marinated it for 2 hrs in a store bought marinade,,, (I hope its not tough :)) It sure smells good !!!

They are the Hungarian hot wax peppers that I harvested when I cut the plant down for the winter. They aren't all that hot. I ended up adding some cayenne pepper and some of that hot sauce I made.

Yes, they are very healthy! Oats and pecans, and there's lots of protein in that mesquite flour, and it's low in sugar. Antioxidants in the bittersweet chocolate.

We'll ignore the white flour and brown sugar. ;)

Are you possibly suggesting there's no shortening like say, butter?
If not, could you make them with whole wheat flour and Stevia instead of sugar? Just axing.
I can definitely do oats, walnuts and dark chocolate.

The pecans and brown sugar were my mods. Rather than 2c white sugar, I used 50/50 white and brown.

The only thing I don't experiment with when it comes to cooking is dessert. Because even if it turned into crap, I'd eat it. Maybe I can try this recipe in a miniature portion, substituting Stevia for sugar, whole wheat flour for white and safflower oil (even olive?) for butter. Then using oats, walnuts and 85% dark chocolate. What do you think?

Hmm... I dunno. I'm more of a cook than a baker. So when baking, I tend to stick pretty closely to the recipe.

My concern with your plan is that, by using oil for butter, it might be too runny, unless you short it a bit. Also that whole wheat flour tends to make things quite a bit denser.

OTOH, there's a good amount of baking powder and soda in the recipe, to compensate for the lack of gluten in the mesquite flour. So maybe it would compensate for the density of the whole wheat flour.

I say, if you have the time and ingredients to spare, go for it! :D

Triple D Cheeseburger Soup
Description
Recipe
About As seen on Diner’s Drive-ins & Dives, recreated from the show Dive’s Worth the Drive (picture courtesy of Food Network

Yields: 6 servings

* 1 pound super lean ground beef
* 16 oz chicken stock
* 1 pints half and half
* 1/2 block of Velveeta, cubed
* 1 large onion, diced
* 3 T. butter
* 2 med tomatoes, chopped
* 2 cups Iceberg lettuce, chopped
* Salt & Pepper to taste
* 1/4 cup flour mixed with 3/4 cup water (for thickener)

In a Dutch oven, melt butter and sweat onion until translucent, remove. Add ground beef, season with salt & pepper and cook until browned and a bit crispy, drain. (Next time I will make actual patties and grill them to get more of a burger taste) remove from pan.

Add your chicken stock, & flour slurry, bring to boil scrapping bits off the bottom. Add half & half and Velveeta. Cook until all the cheese is melted, not boiling.

Season to taste and lower heat. Cover and cook for about an 1 hour. Add the tomatoes and lettuce, stir and serve. ENJOY!

Mountain man Breakfast in a Dutch Oven

2 lbs sausage
2 lbs hash browns
8 eggs
1/4 cup water
spice to taste
2 cups cheese ( I used colby jack)

This is super simple, and good too. Brown the sausauge remove from Dutch Oven(I used my 12" cast Iron skillet for this as I was cooking inside), Brown the hash browns in the sausage grease(My sausage was kinda' lean, so I had to add some Bacon grease)

Place the Hash browns in Bottom of Dutch oven.
Layer the sausage crumbles over the Hash Browns.
Whip the eggs with the water added and pour this over all.
Sprinkle the cheese over top of this in an even layer.
Bake at 350 for 20-25 minutes.
Serve and enjoy!!

Well my Dutch Oven is getting Broken in well. I cooked my 3rd or 4th Cobbler in it today, Blueberry this time. It is good But I think I need to reduce the juice more. Juicy but tastes GREAT. The wife is regretting getting it for me now, she said she is trying to lose weight but the stuff I've been cooking in it is just too good. I am really loving this piece of kitchen/camp equipment! I have cooked a "Hamburger Helper" One dish type of meal and a Mountain Man Breakfast in it so far. I've already asked for more Dutch Ovens!:nod: How did I EVER live without a Dutch Oven before???? I am planning on trying some bread and Chicken and Rice in the Very Near future!

Poco, glad to hear your enjoying your black pot. Bread is easy, I just made some cornbread for supper today along with some venison stew. Just remember to rotate ur pot one way and ur lid the other every now and then and your good. The rotation keeps the cooking even. Also keep in mind that you can put some stones or something in the bottom and use a pie plate or something similar and it works just like an oven.

I always wanted one big enough to do frozen pizza's. I recently lost my job and am low on propane so my dutch ovens are getting a real workout, everything from corndogs to chicken nuggets to chicken, roasts and stews. Thank god I have enough dead trees around here to burn cook fires forever if need be. If u ever need any tips or recipes don't be shy.

Egg and flour if you grate the potatoes, Benesse. If you use left over mashed potatoes all you need is egg. You're trying for something like a pancake batter.

A dust of flour helps them hold together while they brown quickly. The mashed potatoes are already cooked so all you have to do is heat the inside and brown the outside.

I just put a meatloaf in the oven. Should be done in a few.

Mmmmm...mac and cheese! Is it from a box, or made from scratch?

I hate to admit it, but I really like the kind out of the box. LOL
Not saying it's better....just that I don't mind eatin' it!!

From scratch. I like the stuff from a box too, but it's so expensive over here, I can't justify buying it, when it's so easy to make.

I haven't bought the pre-packed mac and cheese in many years, but as a young sailor on a very tight budget it was a diet staple. Not sure what the cost is now, but we used to get it either on sale or at the Commissary (Navy grocery store) for around ten cents a box. Yep....ate a lot of mac and cheese back then.

On a side note - if you have a roomate that drinks while he works in the kitchen and he "forgets" to drain the water, you will end up with mac and cheese soup.

Also as a side note, I checked the price of packet Macaroni Cheese (Kraft) and it was £2.45, which is $4.00 or thereabouts for a two portion packet. My homemade was yummy!

Wow, that's nuts! Here, you can sometimes get a three pack of the blue box stuff for around a buck.

OTOH, I paid about $5 for a pack of Hob Nobs, so fair is fair, I suppose. ;)

Had some leftover risotto, and some of that whole grain / brown rice stuff. So I mixed them together, added an egg, and some bread crumbs, formed it in to patties, and coated them in panko. Fried them in some hot peanut oil:

This is an old and simple recipe, but makes the finest tasting potato cakes.

3-medium potatoes
2-eggs
1/8 tsp Baking powder
1/2 tsp salt
1/2 tsp pepper
1 Tbl milk
1 Tbl Flour

Beat eggs well and then add baking powder, salt, pepper, and milk. Set aside.

Peel and rinse potatoes, then grade and squeeze water out. Add to egg mixture and stir.

Dust mixture with flour and stir.

Heat a skillet to medium high and add 2 tablespoons of butter or margarine.

Use enough potato mixture to make two cakes four inches in diameter and 1/4 inch thick.

Brown first side then turn over. Brown second side and remove to plate. Sprinkle with salt and pepper and serve.

Dear wifey is making SOS (Sh** on a shingle). The white gravy type with ground beef,ground sausage and onions. To be served on toast with an egg on top. I know there are approximately 1 million variations , but I can safely say I never met an SOS reciepe that I did not like. Very unhealthy, but a good winter meal in my book. Then she is off to bingo, and nap time on the couch for me :)

Please don't talk about food. I'm still way too stuffed from lunch, which was actually breakfast, at 12:30 this afternoon. We have a small family run chain here that has "New England's Largest Breakfast and Lunch Menu" All Day. :drool:

So, I ordered...........

"The Highlander" - a traditional English Breakfast with 3 eggs over easy, grilled tomato, marinated mushrooms, 2 bacon, 2 sausage, and grilled English muffin, and
A side of grilled cornbread, and
A side of homefries (very well done) and
A side of biscuits and gravy (Southern Style) and
A side of fish cakes and
Dessert - 2 apple crepes with honey and cinnamon.

I washed it all down with a few cups of strong coffee. AND I WAS A MEMBER OF THE "CLEAN PLATE CLUB"!

We don't do fried foods very often. The pork tenderloins last week and tonight were pretty unusual. But I put together some beer battered cod and homemade hash brown patties with pickled beets on the side. We topped that off with a loaf of pumpernickel bread.

Yeah, I was out walking with a face mask, parka and heavy gloves the first part of the week and was out walking today in a T shirt and jacket. It was in the mid 30s and lot's of sunshine. Very nice. Gonna change tomorrow though.:blush:

It wasnt me cookin it but where i am at the moment theres a fruit called jumpfruit, but the locals like to take good things and stick it in a deep fryer. If fruit is deep fried, is it still good for you? Tastes pretty good in any case.
