I think I mentioned this before, but in my youth, my Mother fried SPAM slices in butter and brown sugar. A wonderful treat that I have tried but not anywhere near as good as hers; wonder why. RIP Mom

I always wondered why the fried rice in Guam, Okinawa, and the Philippines tasted about the same when I got it from the street vendors.
When all else fails, read the directions, and beware the Chihuahuacabra!

@ Rollicks Here in the southern tier we call those Salt Potatoes. developed back when salt workers would toss potatoes right into the brine pots to cook.

Those things are like solid but creamy mashed potatoes, truly an awesome texture and hard to describe.
I know! When I do french fries I always boil them in brine first and they're freaking amazing.

Do you ever bake your potatoes with a nail in it? I usually do when I'm camping.

Okay back on topic... Another great way to cook spam is to do what I call "Spamageddon"

So what you do is blanche some brussel sprouts in brine for a couple of minutes, remove and roll 'em in cheese. Then you roll some spam around it, then you roll some bacon around it, then you dry roast it in the oven. hooooooyeaaah!
