    Default Need good chili recipe

    I was just thinking about making a pot of chili......anyone have a good recipe?

    Here's a mild recipe that I've used.

    1 lb. ground beef
    1/2 c. chopped onion
    1 chopped green pepper
    1 (1 lb.) can tomatoes, cut up
    1 (8 oz.) can tomato sauce
    1 (1 lb.) can red kidney beans, drained
    1 tsp. salt
    1-2 tsp. chili powder
    1 bay leaf

    In heavy skillet, cook meat, onion, and green pepper until meat is lightly browned and vegetables are tender. Stir in tomatoes, tomato sauce, kidney beans, salt, chili powder, and bay leaf. Cover and simmer for 1 hour. Remove bay leaf.

    I'll sometimes add a little brown sugar to it.

    Another - fast one

    1 lb Ground chuck
    2 can Chili beans
    cumin to taste
    1 med onion diced
    Jar of Pace Cunky Salsa depending on which kind (mild, med, hot) you use....
    1/2 can refried beans
    Can't Means Won't

    I had the pleasure of being a judge for two Florida State Chili Cook-Offs, sponsored by the Chili Appreciation Society International (CASI). That group holds qualifying contests, most are local fundraisers, throughout the country to get an invitation to the World Championship every year in Terlingua, TX. Great stuff!

    I generally add the following to ground beef...

    onion
    green pepper
    another pepper if I have one
    tomato sauce
    diced tomatoes
    Worcestershire sauce (this is critical)
    favorite BBQ sauce
    minced habeneros (if I feel like it and the wife won't be eating it)
    black pepper
    parsley
    cilantro
    kidney beans if I am feeling like it (not always)
    a little bit of concentrated lemon juice

    No measurements because I never measure. I just throw stuff in. It tastes different every time

    My 7 year old grand daughter tooted a couple of nights ago and the 3 year old threw up. The boy has a week stomach.

    Cool Well,since you asked....

    Here's a spicy one my son sent to me using venison, cut back on any spices you might not want:

    Here is the recipe for your venison chili:
    > Following is the amounts of ingredients for 1lb of deer meat, if you use deer roast or steak, first marinate in lemon juice, soy sauce, and worcestershire sauce. If you use ground meat no marinade is required.
    >
    > 1# deer meat
    > 1# italian sausage, chorizo sausage, or ground beef (your taste)
    > 4 cups of cooked brown beans (sub in 2 15oz cans of beans)
    > 1/2 cup of chopped fresh onions
    > 1 clove of garlic
    > 4 large diced tomatoes (sub in 2 15oz cans of diced tomatoes)
    > 2 cups of water if using fresh tomatoes
    > 1 finely chopped jalepeno pepper (sub other peppers for desired heat)
    > 2 tsp cumin
    > 2 tsp oregano
    > 2 tsp curry powder
    > 1 tsp mustard powder
    > 4 tbsp chili powder
    > 1 tsp cayenne powder
    > 2 tbsp olive oil
    > 2 tsp maza
    > 1 regular hersheys chocolate bar
    >
    > Brown meat in pan and drain. ( if you like grease don't drain)
    > Brown onions, garlic, and jalepeno with the olive oil in a seperate pan. After onion mix is browned add tomatoes and other dry ingredients and simmer for 1 hour, add water as required to maintain a smooth consistency . The only remaining ingredients should be the beans, maza, and chocolate bar; add these after 1 hour hour simmer and continue simmer and add water as desired for thickness.

    All of the receipes look good. My last batch of chili (for a benefit cook off at work) I marinated the ground beef and hot italian sausage overnight in 2-3 cups of rum (Anejo from Puerto Rico), I don't recall which it was, 2-3 cups since I started sampling early . When I browned the meat, it gave it such a good carmelized flavor. I almost won with that one

    Something I have found is depending on location some people eat chilli and others eat chilli soup. They are both good but very different. I like macaroni in mine but that's just how my mom made it. My wife makes it different, still good but different.
    Alaska to Florida, for how long, who knows...
