The standard advice is to check the archaeology sites in your state park system. Missouri has several and they all schedule demonstrations of knaping. I found three sites that do so with a quick google search of your park system.
Even though the parks might only have one day of knaping scheduled, and it might be months away, I know that at the archaeology sites there will be rangers and guides that are involved with these activities and they will be able to connect you to individuals or clubs that will help you.
You can get books and instructions on youtube, but knaping is a skill best learned watching a skilled knaper.

this aug or sept is the boisd'ark or bodark as moswt call it . it is the largest knap'in in the us i believe.
it is in central'mo. google it and see. also try bing images to get a feel of the place.
as for stone you should find plenty of novaculite in your area, btw welcome
coyotes listen to them, like children of the night what music they make.
Thanks all! Been flooding here for the last couple days. Have had over 10 inches of rain in the last 24 hours. Too wet to get outside and all roads are flooded so can't go anywhere. Waiting for it to dry so I can get out and see if I can find any rocks to try.

Your local museums or collage my have a listing of references and events in your area.
I don't knapp, but work with both our Archaeological Society. and Museum...there is a few knappers that may show up at some events to put on "schools".

Some years back I bought a flintlock. I figured that in a worst case scenario I could upon finding a sulfur source make black powder or cure all my earthly ills, and have an ignition source (flint). Lead would be great for projectiles but not absolutely necessary.
I figured I could knap out some flints for the flintlock easy peasy. I had done a little bit of knapping and made some crude arrow points but creating a flint that would fit and lock into place on the flintlock was more of a chore than I'd imagined. Yes, it can be done but the skill level is far an above that needed to shape a flint flake into a point. The stock must be clear and free of checks and you have to know what you're doing to get the taper right to strike the frizzen to get the right sparks. I buy my flints.

I took a class at a knap-in and told them what I was doing and one of the guys showed me how to knock a thin spall off a core and shape it right for the jaws of the lock. He said he got requests for that all the time.
You do it like you would knock big flakes off a core when shaping a big flint blade or point and instead of throwing away the waste you pressure flake it to clean it up and straighten the edges. I have not bought a flint in years.
In an emergency you can clamp a short piece of ferro rod in the jaws of the lock and it will practically explode when it hits the frizzen. Looks like on old fashioned flash bulb going off. Scared me half to death the first time I did that.
