Our boy scout leader was big on cattail root.....actually the whole plant is season.

Roots themselves are good peeled and raw like the vid...or cooked in butter....available almost any time or the year if not frozen.
Tried drying cattail roots and pound into flour....can be done but takes a LOT of roots and time.

Turtle, snake and Frog legs,( if you have big enough frogs..OK but not on my look for list..
Pine needles, rose hips, mint (you can smell it) all make pleasant tea.....maybe not so much for nutrition...but give hot water a better taste.
Depending on time of year....I think I could get by with a rabbit or squirrel some tea, maybe berries/ nuts.....
Of course some medicinal spirits (wink, wink, nudge).. keep the many badness away....
