Thread: CatTail Roots

    Default CatTail Roots

    I dug seven or eight CatTail roots this afternoon, and began experimenting in making cattail flour. Has anyone done this? The seven or eight roots didn't give me anywhere near enough to do anything with, but I am anxious to know how things made with cattail flour taste. Is it anywhere close to real flour? Any restrictions on it's usage? (IE Could you bake a cake using it)
    I have researched it a bit on google, but haven't found a ton of testimonials, or descriptions on it's actual taste, and figured I would ask here, just to get peoples opinions.

    I've done it on a small scale just to learn the process. Tasted the paste while drying - nothing spectacular or odd to report. Mixed it with regular flour when dried to make bread - not really enough to tell if it changed anything.

    I've ground the flower (the brown cylinder) into a flour and added boiled seawater to it to make a thick paste. It can be baked on a flat rock or on a skillet. Looks kinda' like a matzo cracker. The taste is somewhere between whole wheat and barley.

    The roots are good whole, raw, or cooked with butter.
    I consider cattails one of my three items I look for in foraging....cattais, arrowhead root, pine needles for tea.....
    Lots of greens, as well.... but these have starches and vitium C

    You need a LOT of roots for any amount of flower...

    My opinion is the flour is good. It is mild but don't expect it to rise like wheat flour. As a survival food it is way down my list. After hours of processing and digging around in a swamp to only get a cup of flour is not worth it in my opinion. The rhizomes fracture too easy for my methods of gathering. When that happens dirt gets into the rhizome and spoils that whole section. it can get quite frustrating. If I want starch there are a dozen other sources that are far easier to harvest and don't need all the processing. The young shoots and the pollen are a whole other story. Those are worth the effort.

    Fiddle heads and ramps are on my spring list, along with brook trout, but those aren't a plant :P I am thinking of check out burdock as well, and would love to learn mushrooms, but need an expert to show me the ropes on those, as trial and error isn't wise haha. Anyway, thanks for the info guys. And Moutain Mark, I was ripping them out of the ground, and had the dirt problem as well. Gonna bring a shovel next time, and get the whole root. I plan on checking out the soots as well.

    Burdock is an economical survival food and I find them tasty. I think you will enjoy. If you don't mind my asking, where abouts in VT do you live? I might be able to connect you with some people who could teach you mushrooms. I am also hosting a mushroom class this fall.
