When my kids were young there were two foods that never lasted until they cooled off!

Beef jerky and hard tac made with honey!
If you didn't bring jerky what did I just eat?

I've made a couple of batches of hard tac over the years. I can say with a certainty that I got the hard part down pat. But it did taste good.

And....it lasts forever. I do not believe there is a mold alive wicked enough to attack hard tack.

Many years ago I was the curator at a sizable local museum located in the deep south. The storage area was a treasure of strange and wonderful things.

The town had been a huge supply depot during the CW with two rail lines and 5-6 major highways intersecting in the middle of town. Fortress Rosecrans, with a detachment of 40,000 men, and they had cannon pointed directly at the courthouse square to insure the natives stayed peaceful.

We found a few packages of Union issue hard tac still wrapped in the original waxed paper. We put one package on display and had a serious conversation about eating the rest. Being the first among cowards when it comes to eating the unknown, I passed.

That was back in 1994 so it was at least 130 years old and it looked as fresh as if it had been baked yesterday.
