    Default Salt Cured Bacon

    Going on a three day trek this month, next weekend to be exact and I'm taking two pounds of salt cured bacon for the mornings, anyone got any good ideas for cooking this up other than I just slice it and toss it in the skillet.
    I would like to try something new.
    There is no greater solitude than that of the Tracker in the forest, unless perhaps it's that of the wolf in the wilderness.

    A method of preparing pork belly is to braise it slowly. Even though it is usually done with uncured pork belly, I don't see why it couldn't be done with bacon. It isn't really a breakfast food, more of an evening meal. Cut portions of the bacon into squares about 3-4" square and place in a pan with water or other flavorful liquid (I like a fruit juice of some sort mixed with water) and place over a low fire and allow to gently simmer all day (6-8 hours). A lot of chefs will do a 10-12 hour braise, I realize this isn't practical for the outdoors setting. I don't know if this method is practical for what you will be doing, if you would have a set camp that would allow you to start it in the morning and leave it until the evening. But, this is a tasty treat.

    Going to be moving everyday, so it may not work. Sliced into bacon strips may be my only option, I will have spices for though. Thanks I may try that at an evening meal.

    Hey Beo, add a couple big pinches of brown sugar, couple shakes of your favorite hot sauce and a big dash of paprika. Fry and keep stirring till your likeness of crispyness.
