The SAS Survival Handbook is a decent general reference, though I don't carry any books of this type when I'm out and about.
I do like to have a copy of Buck Tilton's Back Country 1st Aid and Extended Care with me, though.

Also vouch for the sas survival handbook. Also throw in books for plants medicinal and edbible.. and perhaps a first aid book... maybe a venomous snake book...

Remember that all the military manuals are written with mission completion as the primary goal.
My own preference would probably go toward the Boy Scout Handbook as a general purpose woodcraft guide. Kephart's Woodcraft and Camping is also good.
The only problem with books in a pack are the added weight which is not really justified.
On the trail you do not need to look something up, you need to already know it!
