I have been looking for squirrel recipes (although we have several we like already), mostly because many of them are off-limits to me due to the fact that I can't eat wheat AT ALL, and many recipes call for flour at some point. You can substitute corn meal sometimes, but often there is no good sub for flour. So I'd be interested in hearing what anybody likes. Another thing about squirrels is this: some of them are really, really tough and some of them are really tender...but it doesn't seem to be directly related to their age, which I find surprising. The first one I cooked (I've done about 35 so far) was a big old male, and not knowing any better, I pan fried him. He was delicious. So when we did a second one this time we baked it with a piece of bacon on each piece of squirrel. Again, delicious. No problem, we thought - let's have friends over! So we did, and cooked up four squirrels exactly like the last one. Everybody was polite, but they were near inedible, they were so tough - it was awful. But weirdly, the next day I tried having some leftovers for lunch and bingo - the piece I grabbed was tender and perfect. It turns out that three of the four were super tough and one (which, of course, nobody got at the dinner - talk about luck) was just like the first two.
Any ideas?
