    Default scandi grinding for knives

i just got done today doing my first batch of knife blanks in my forge.
got them to the point of nonmagnetic then quenching the edge.
i still have to sand them clean and when done with that i wish
    to scandi grind them.

which brings me to the question do i do this blade edge facing up or down?
and which grit belt would be best for this?
coyotes listen to them, like children of the night what music they make.

You say you quenched but did you heat treat after quenching? It's necessary.

I always grind blades edge up. It is easier to see what is going on and how each pass is affecting the geometry.
If you didn't bring jerky what did I just eat?

Edge up for the reason Krat mentioned and so that heat is traveling toward the larger mass of the blade.
