    Yea recipe called for a LB but next time I think I'll use 1/2LB instead

    Mine is pretty simple actually. Whatever leftover meat I have in camp except for fish...This may include left over roast, brisket, pulled pork, any game, steak, chicken, smoked sausages, hamburger, breakfast sausage, literally whatever meat I have in camp (I have tried fish a couple of times and it was not really very well received) chopped/shredded, left over baked potatoes or boiled ones if I have no left overs, Whatever peppers/celery/onions I have in the camp box, A small can of diced green chilies or if it is a really big batch two cans. I am cooking this is a 12 by the way. Using a touch of bacon grease (like cook a couple of pieces of bacon first then use that grease) brown the chopped meat, onions and bell peppers. Chunk/dice/mash the cold cooked potatoes then add them to the pot. Stir the contents regularly for 5 or so minutes over medium to low heat. 1 egg for each person and one for the pot in a bowl. If you have salsa/hot sauce/picante, and you want to, add it to the egg mixture. Add a little milk/cream/condensed milk/evaporated milk, or water if you really don't have any milk in the camp, to the eggs. Whip the eggs until they are well mixed and have lots of air bubbles. Pour into the pot and stir into the mixture. Take a few, like two or three good coals out of the fire ring and set the pot (with legs I hope but of not then use a spider or trivet) on the two or three coals. Cover it until the eggs "set" Then sprinkle as much cheese as you want/have/can stand on the concoction and cover again. Put about 6 good coals on the lid. let set for about about two minutes then rotate the lid 90 degrees, repeat once more. Serve on plates/biscuits/bread/tortillas Salt to taste. After kind'a readin' this over and thinkin' about it I also know that I have never used any liver, or any seafood at all. It is basically a hash with eggs added I guess.

    Ha....had it for breakfast this morning....with chunks of buffalo steaks lelt-over's, a left over baked potato from supper....
    Added the fixin's.....peppers, onions, eggs.......over toast....with salsa.
    No cheese this time.

    Made it a version for our whole camp....and like you say an egg for each....in the BIG frying pan......

    I have a small version of this almost every morning fried up in the skillet.

    Dice an oz or two of spuds and a slice of onion, mix in some sausage/corned beef/diced ham or crumbled bacon, add some garlic powder and seasoning salt, scramble a couple of eggs into it and shred some cheese on top just before serving with salsa or preserves if I have a sweet tooth.

    That and about half a pot of coffee set me up for the day and keeps me away from the Waffle House. I get into trouble at the Waffle House.
    If you didn't bring jerky what did I just eat?

    Worst BLT I ever had was at a IHOP......
    Make good flap jacks, pan cakes, and waffles.....
    But the BLT's suck.

    BTW... DW likes breakfast for supper.....I don't....just saying.

    I am game for breakfast food anytime of the day or night. I think it comes from working shift work while I was in college. When I got off work it was 7am and time for breakfast! From then on I actually crave breakfast food when I get off work even at 4-5pm.

    I have been known to get a breakfast craving going so late in the evening that I had to rush to Cracker Barrel to get there before they closed!

    These days they put eggs on burgers and eggs on pizza and I saw eggs on tacos the other night!! How do you know when breakfast is anyway?

    Yes, sir. I've been known to do eggs and bacon with a side of biscuits and gravy for dinner. Good stuff any hour.

    Wait! You chose between the two? Why choose when you can put them both in.

    This was my standard breakfast with the scouts. But, I also added tortillas and salsa. Growing up in Texas has its side effects.

    I christened my new 17" skillet on my last trip. In one skillet there was......
    2 lbs pork breakfast sausage
    3 lbs bacon
    1 lb ground venison
    3 lbs diced potatoes
    one large Vidallia onion, diced
    3 dozen eggs
    6 cups various shredded cheeses

    That skillet can sure hold a lot.
