Sounds like more of a collectors thing. Id pay a few hundred bucks for a good block with some good cutlery, but not for 2 steak knives when there are so many quality ones for far cheaper.

My "kitchen knife set" does not match what most of the retailers think is a kitchen knife set.
I snagged a knife block form some unknown source back in the dim reaches of time and have filled it with a mix of Forishner, Opinel, Old Hickory and Old Forge cutlery that suits my needs.
It's a real mess but it works for me.
It was sort of amusing to find that the people at America's Test Kitchen feel about the same way I do and do not recommend a "Set", but promote a universal block and three or four high quality blades that will do about any job.
I often joke with my British friends that if I lived over there I might not be able to carry a lock blade pocket knife but I would own the best set of Henkel kitchen knives money could buy, and sheaths to carry them in!

You can buy brand new Old Hickory knives at very reasonable prices. https://ontarioknife.com/cutlery/old-hickory Buy individually, or a set (page 1) and there are a couple that would make good steak knives on page 2.

I have the Cold Steel knife set and like it. I have another set more in line with what Kyrat said as well. It sort of grew out of knives I like.
I'm probably the wrong one to ask about kitchen knives! I'm a chef so my taste in kitchen knives probably runs a little ritzier than most would consider. I will say though that all my kitchen knives are Japanese. Better to have two or three good ones than a whole block full of junkers that you don't need and won't use.
