Do you basically do it the same as in a big oven but just use smaller pans?

A toaster oven works fine. One thing to be careful of is that you want a bottom heating element in it. Most (not all) have top elements which would be like trying to bake in a broiler. If your oven has a bottom and there is a way to turn off the top element that is great. If your top element cannot be turned off then you will need to cover the bread.

Thinking nearly all ovens differ and most are subject to trial and error.....give it a go and adjust temperature, ingredients, covering the bread etc until it is right for your needs. Some like bread crusty, some prefer soft, some made with white flour, some with wholemeal, some like seed-bread,flat bread etc. Don't be frightened of trying, most of all enjoy!

Any time your crust is browning too quickly create a tent of aluminum foil and sit it on top of the bread as Crash suggested above. This also works for pie crust too.

Bread does rise some in the oven. Keep an eye on it.

Bread also likes a fairly hot oven. A lot of the smaller toaster ovens don't hold a 400° temperature very well.

baking bread in a toaster oven, how novel. I thought a toaster oven was for drawing temper on a knife blade. LOL
