we built a small smokehouse early last fall. we also have a small b'bque smoker that i use for small stuff.
when i'm using the small one with small cuts i buy hickory or apple wood. when i use the big one i use larch (which is good but 'different').
i'm going to try cottonwood next summer.
living where we live our options are limited so we have to make do with what we have avaliable. i've been trying to get my dad to load up his truck with hickory in alabama and bring me a load. he says it's "to damn far"...

Apple, Hickory, Mesquite, and I have tried Cherry.

I also like to put Apple Juice with some brown sugar and other spices in the water pan on my smoker.

So, does smoking meat give you a high? Do you have to roll your own, or does Camel have a box? Anyways, I don't smoke meat. When I was in 6th grade, Barbara Bush told me to just say no.

Pecan or hickory for the flavor and dry oak for the heat.

    pecan, oak, hickory, cherry, tulip.
different colors, different flavors, all delicious!

I'm particularly fond of tulip and cherry, but for availability I mostly use oak and pecan.

The previous conversation reminds me of a cartoon in Jim Rigg's book about "The wrong way to smoke a hide". I needed that smile today, thanks gang!
