Pine nuts are best purchased. Gathering them is a lesson in frustration as far as I'm concerned.

Isn't that like asking someone to describe the color pink? Yeah, I like them. They are a tad expensive but I think they are good.

They're used in a lot of dishes - pesto being one. I like a few sprinkled in a salad.

Roasted, they are kind of mello but raw they are a little bitter IMO. They cost a little too much to use them as a snack IMO.

Kidney Stone victims beware. Pine nuts (I love 'em in stuffed acorn squash and sprinkled over roasted artichoke) are extremely high in oxalates.

usually the pine nuts you buy in the store are Pinyon pine. You can also get worthwhile harvest from the Stone pine if it grows in your zone. Most other pines aren't worth the effort.
If you eat too many pine nuts you can ruin your sense of taste for days. They leave a metallic taste that doesn't really go away. At least in some people (I'm one of them).
I like them roasted but a few plain ones are good in couscous recipes.
They have a distinct fresh-sawn pine taste.

I prefer baked but raw is also good.
As far as harvesting them it sucks, the pine pitch gets on everything.

Now we know what's making the chair lumpy. Quit dropping your nuts.
