I killed a small doe and dad wanted to smoke the hams instead of sending all of it to the processor sooo i was looking for a good marinade for them.

Here is a list of a bunch of stuff you could use to marinade. My marinades are generally on the fly. I don't measure, just dump in. Remember that a marinade is very dilute on the actual meat. This means that you have to put stronger flavor in the marinade than you would normally put on the meat to eat directly. Sometimes my marinade consists of all these ingredients, and sometimes just some. It depends on what is available and how I am feeling at the moment.
Ingredients:
Worcestershire sauce (this is an important ingredient)
Italian dressing
smoke sauce
your favorite BBQ sauce
another BBQ sauce that is different than the first
onions
green peppers
jalapeno peppers
cilantro
paprika
parsley
garlic
salt
black pepper
concentrated lemon juice
concentrated lime juice
mustard
teriyaki sauce
soy sauce
various spices
I am sure I forgot something. I generally like to experiment and try different things.

In my experience cook deer hot and rare. You can marinade it in a golden marinade. But, if it ain't cooked hot and rare or real low and slow.
You all probably know all about backstraps and tenderloins. But, I find the other less popular cuts are best powdered with Everglades Heat and then grilled with pineapple or mango and various kabob ingredients.
we cooked one 2 day and it was very good we used a seasoning called southern flavor that is for deer and wild game and a seasoinin called Butt Rub dot laught i swear it is good we cooked it 4 about 3 1/2 hours in the Redneck Grease Can Smoker ( post about it later) it was very good and makes a great sanwitch i think the next one is gonna be in italian dressing
