    Default Whats your Favotite Leftover

    What do you always make EXTRA of for the sole purpose of having leftovers ?

    For me, Its stew,, I always overdo it,, and it always taste better the next day

    I make it with Beef, Pork or chicken with every kind of vegetable i can get hold of,,

    During the heat of the summer for me its gazpacho, and my wife's lazagna.

    its a cold tomato based soup.

    I chop fine:
    Onion, celery, carrot, broccoli, yellow squash, cucumber, green and red peppers, garlic, black and green olives

    I used to use V8 but fresh tomatoes some chopped some pureed mix together. There should be enough tomato to be like the broth or liquid from soup.

    Celery salt, salt and pepper, red or balsamic vinegar and tabasco.

    Great with cheese and crackers. Serve chilled.

    Garnish with cilantro and diced avocado.

    I' would give proportions but I just buy a bunch of vegetables chop them up and add the tomato til it looks right and spice to taste. I usually end up making about a gallon and a half. It will keep for about four days then goes south real quick. We make it for group things.

    I have 2 favorites, lamb and barley stew and prarie pie (think sheppards pie but with bison)

    Either Bacon Dumpling, leftovers fried for breakfast next day served with a couple of poached eggs, or Soup. You can never make too much soup!

    my mouth is watering just thinking about all the recipes my wife makes..

    Vegetable soup.. we usually make a 2 gallon pot of this stuff and I can eat it every day till it's gone. Love It!
    Chili, but we usually only do that when it's cold.
    Shepherds pie (with cheese, onions, peas.. it's a whole meal in a pie!) Usually doesn't last very long..
    Squash, tomato, and okra (poor-man's garden soup), mixed and peppered. This usually doesn't last long either. I eat it till it's gone and lick the bowl clean. One of my favorites, especially when mixed with other veggies.

    Just a couple that we always fix in excess because we like them so much.

    There isn't much that doesn't taste great the next day. I'm not a picky eater.

    Probably my all time favorite leftover is MEATLOAF!!!! My wife makes it with a couple hard boiled eggs inside, kind of an extra special suprise when you slice into it. I am not usually a leftover kind of guy, but meatloaf is my fav
