    I've been so busy these past few days, I haven't been cooking -- mostly dining out, or cooking easy / unhealthy stuff. It was nice to finally have a nice, home-cooked, fairly healthy meal last night. Halibut with a green tomato and orange relish, asparagus, and some microwave brown rice / whole grain stuff.

    Mmmmm...mac and cheese! Is it from a box, or made from scratch?

    Egg and flour if you grate the potatoes, Benesse. If you use left over mashed potatoes all you need is egg. You're trying for something like a pancake batter.

    A dust of flour helps them hold together while they brown quickly. The mashed potatoes are already cooked so all you have to do is heat the inside and brown the outside.

    I just put a meatloaf in the oven. Should be done in a few.
