    Haha! We got a big ol country ham for Christmas. The hock is in the freezer, waiting for a nice hot bean bath.

    BTW,, if you boil them for a few min then drain off that water,,add fresh then cook, They are not near as gassy.. (something about the sugars in the beans)

    I usually soak mine overnight, change the water, and cook them.

    In Mexico, they add some epazote (Dysphania ambrosioides) to them for that purpose, and for flavor.

    I am going to drag out my Volcano and cook Chili. It's snowing like crazy in Utah and it is a perfect day for just such a thing.

    Lava seems to be too hot a temperature to cook chili. It would probably be good but I think I'd break a sweat that close to molten rock. Tonight shall be turkey quiche. Yeah, real men do eat it.

    Well Mel is getting good practice on his Dutch oven. He made hamburger helper in it last night.
