What to do with just a few loquats

Saturday, I headed over to my friends house, to help her pick her loquats. Unfortunately, she pruned the hell out of it over the Winter, and incorrectly. All the lower and inner branches were gone, so all the fruit was way up high. We got what we could, and she gave me all of it:

From that, I made loquat preserves, with lemongrass:

I put the peels in some white rum, along with the lemongrass stalks. We'll see how that turns out:

I'm also drying to pits, to make an amaretto-like liqueur:

I know, they contain cyanide. Hey, I like to live dangerously.

I have no idea what a loquat is, nor have I ever seen one lol What do they taste like?

Let's see.. it's an asian fruit. Looks a bit like an apricot. Tastes like a cross between an apricot a starfruit and a pear. The inside looks like this:

Trust me, it's not nearly as exciting when you have to look at it every dang day. :p

Those things are huge! I bought a tree a few months back but its not been too happy here so far. Ours are cumquat sized, not much bigger than your seeds.

The one I showed split is half was particularly large. Most were about as big as a small egg - still large for a loquat!

I think since my friend so severely pruned the tree, that lead to significantly fewer, but larger fruit.
